Orange Creamsicle Truffles

Popsicles and ice cream treats are always the highlight of summer. Although I grew up in the country and didn’t often have the joy of an ice cream truck stopping in front of our house, I do remember having  my share of ice cream novelties. (By the way…why do they call them “novelties” anyway? That’s always been weird to me for some reason.) What were your favorites? Mine were the strawberry shortcake bar, classic ice cream sandwiches, orange creamsicles and fruit popsicles.

I’ve already shared with you one recipe from my Grandma’s recipe box.  As I looked through this goldmine a couple of weeks ago, I found a recipe for “Orange Balls”. I’ll admit…my first thought was “Yuck”.  But as I looked at the hand-written card and thought about it, I knew I could turn this odd little recipe into a creamsicle dream.  And so these Orange Creamsicle Truffles were born.

Vanilla Wafers, powdered sugar, orange juice concentrate and cream cheese give these little  no-bake bites their creamy-orangey flavor. It took a few tries to get the right combination of ingredients so that the cookie dough was not to wet, could easily be rolled into balls, but yet still be full of orange flavor.  A 12-ounce box of crushed vanilla wafers, 3 ½ cups of powdered sugar, ½ cup orange juice concentrate and 4 ounces of cream cheese gave us just the taste and texture we wanted.  You can use a stand mixer or hand mixer to get these ingredients all mixed together just right. After mixing, refrigerate the dough for just 1 hour.  This made the dough easy to handle so that they could easily be rolled into balls. We got about 32 truffles by rolling the balls 1 inch in diameter.

After you have all of the dough rolled into balls, melt a package of vanilla Candiquik according to the directions on the back of the package.  I love Candiquik because it melts super easily and comes in it’s own little microwaveable tray.  One less dirty dish for me to wash! Cover all of the balls with white chocolate and place them on a cookie sheet that has been covered with wax paper or parchment paper.

If you’d like, you can zest an orange and sprinkle the orange zest on top of the orange creamsicle truffles while the candy coating is still wet. That means you’re going to have to dip a couple of truffles, sprinkle the tops with orange zest, then repeat with the next couple of truffles. Don’t wait until the end to sprinkle your truffles. The Candiquik sets quickly!

Unsure of how to zest an orange? Don’t worry…we were there with you. We just zested our first lemons and oranges this spring.  But wow…we were missing out! You get an amazing flavor when you zest an orange! There are many tutorials out there and you can find a way that works best for you.  We simply use a hand grater.   Be sure to grate just the very top layer of the orange.  Don’t keep grating once you get down to the white part of the orange.  That is the pith which tastes bitter.  It’s good for you…full  of fiber and antioxidants, but you don’t want bitter on top of your truffles!

Orange Creamsicle Truffles

Ingredients
 

  • 12 ounces vanilla wafers
  • 4 ounces cream cheese softened
  • 1/2 cup orange juice concentrate
  • 3 1/2 cups powdered sugar
  • 16 ounces vanilla Candiquick
  • Zest of 1 orange

Instructions
 

  • Place the vanilla wafers in a Ziploc bag and crush them. 
  • Place the cookie crumbs in the bowl of a stand mixer or a large bowl. Add the softened cream cheese. 
  • Using either a stand mixer or hand mixer, mix together the cookie crumbs and cream cheese, adding the orange juice concentrate as you mix. 
  • Slowly add in the powdered sugar, ½ a cup at a time, until the dough is easy to handle and able to be rolled into balls without sticking to your hands. This was 3 ½ cups of powdered sugar for us.
  • Once the dough is well-mixed, place the bowl with the dough into the refrigerator for 1 hour.
  • Remove the dough and roll into 1-inch size balls. You'll get about 32 balls.
  • Melt the vanilla Candiquik in the microwave according to the package directions. 
  • Using a fork, dip the balls into the Candiquik, coating completely. Tap the fork on the side of the candy tray and let the excess candy coating drip off. 
  • Place the balls on a cookie sheet that has been covered with wax paper or parchment paper. 
  • Before the candy coating sets, sprinkle the tops with the orange zest.
  • Allow the truffles to set completely before storing in an airtight container.

Notes

Candiquik is a candy coating that is super easy to drizzle and dip your favorite candies and cookies in. If you can't find Candiquik, you can substitute white almond bark or white chocolate.
