Easy Pork Fajitas Recipe

About a month ago I had the opportunity to virtually visit an Ohio hog farm. You can read all about the Schwab family farm here.  Today I’m sharing with you one of the Schwab family’s favorite pork recipes… this easy pork fajitas recipe with peppers and salsa.

I think this fajitas recipe will quickly become one of our favorites too. 15 minutes until dinner is on the table? It’s a win all around.

I can see why a farming family would need such quick dinner recipes after a long day of work. I’m always impressed at the love and care that go into raising animals. After my visit to the Schwab family farm, I realized what dedication is required to provide the pork that I eat on a weekly basis. And the Schwabs aren’t alone. More than 3,500 family farms just in Ohio raise enough pork to feed about 25 million people.  That’s a lot of people! When you buy pork at the grocery store or at a farmers market, you can know that you are supporting Ohio farm families.

For these easy pork fajitas, all you’ll need is a pound of pork loin, cut into thin strips. Saute the pork along with a pepper, then add in some salsa.

That’s it!

The filling for your fajitas is ready.

We like to top our fajitas with cheese, sour cream, and fresh cilantro. Sometimes I add diced tomato or pico de gallo. And the kids prefer their fajitas with a side of rice.

Easy Pork Fajitas

Ingredients
 

  • 1 pound boneless pork loin roast cut into thin strips
  • 1 green bell pepper cut into thin strips
  • 3/4 cup salsa
  • 4 flour tortillas (8-10 inches)
  • 1 cup cheddar cheese shredded
  • 1/2 cup sour cream optional
  • 1/4 cup freshly chopped cilantro optional

Instructions
 

  • Spray a nonstick skillet with cooking spray.
  • Heat the skillet over medium-high heat.
  • Add the pork and pepper strips.
  • Cook for 3-4 minutes until pork is lightly browned.
  • Add the salsa and heat through.
  • Wrap the tortillas in paper towels and microwave on high for 30 seconds to warm them.
  • Spoon the pork mixture into the warmed tortillas.
  • Top with cheese, sour cream and fresh cilantro, if desired.
  • Serve with additional salsa.

This looks scrumptious! I absolutely love fajitas, I’ve just never thought to make them with pork. I’ll be adding this genius idea to my dinner rotation!
