These Pecan Sandie Truffles are a simple blend of Pecan Sandies, cream cheese, pecans and powdered sugar. Dip them in vanilla Candiquik and sprinkle with pecans for treat with a creamy, nutty flavor!

Pecan Sandie Truffles

As you know, I’m becoming less of a picky eater.  It could be that over the past year I have been more adventurous with foods, or just I’m growing to like more foods. I can handle nuts (as long as they’re not whole) in a lot of things and actually enjoy the nutty flavor. I can also tolerate tomatoes in soups, but that’s about it for tomatoes. I think I would like Pico de Gallo, but mom and dad secretly don’t want me to like it- because that means more for them. The bad thing about it is, as I’m growing out of my picky-eating stage, my sister is still in the middle of it. Every day, it seems, she doesn’t like a kind of food, and it changes every day. She claims she doesn’t like stuff like donuts or pizza. Who wouldn’t like donuts and pizza? I’m pretty sure I’ve never said that in my life.

All that said, I’m glad my taste buds are developed enough to enjoy these Pecan Sandie Truffles. Yes, the main focus is pecans, but more importantly, pecan sandies. Those are probably my favorite store bought cookies (besides oreos) because they taste pretty good even though they are hard and crumbly.They’re a different kind of good than a gooey homemade chocolate chip cookie.

These Pecan Sandie Truffles are so easy to make they’re dangerous. Want to know what my dad said about these? When he bit into one of these truffles, he said “What are these? They’re amazing!” (We make him try our goodies first and tell us what he thinks before we tell him what they are.) “These are Pecan Sandie Truffles,” we told him.

A simple “wow” was all he said in reply. Oh yeah…he also said, “I want another one.”

Yes, the nuttiness in these truffles is amazing. I love how I taste pecans, but it’s so soft when you bite inside….just like cookie dough.

There are 5 ingredients total in this recipe. Pecan sandies, powdered sugar, cream cheese, vanilla candiquik, and crushed pecans. You can make these fairly quickly and easily. In one afternoon you can make these and eat them all before anyone notices. You’re welcome.

These Pecan Sandie Truffles are a simple blend of Pecan Sandies, cream cheese, pecans and powdered sugar.

Ingredients
 

  • 1 package Pecan Sandies cookies (13 ounces)
  • 8 ounces cream cheese softened
  • 1/3 cup chopped pecans divided
  • 1/3 cup powdered sugar
  • 16 ounces white chocolate

Instructions
 

  • Break the Pecan Sandies cookies into large chunks. Place the cookie pieces into the bowl of a stand mixer. 
  • Add the softened cream cheese, ¼ cup chopped pecans and powdered sugar. Blend this on medium speed for 3 minutes until the cookies are completely broken down and mixed into the cream cheese. 
  • Roll the truffle mixture into 1-inch balls. Place the truffle balls on a cookie sheet that has been lined with wax paper. 
  • Freeze the truffle balls for 15-20 minutes.
  • Melt the white chocolate in a double boiler or in the microwave. 
  • Using a fork, dip the truffle balls in the chocolate, coating them completely. Allow the chocolate to drip off and place the truffle back on the wax paper. 
  • While the chocolate is still wet, sprinkle the tops with the remaining chopped pecans. Allow the While the chocolate is still wet, sprinkle the tops with the remaining chopped pecans. 
  • Allow the chocolate to set and store the truffles in an airtight container in the refrigerator.

Oh my goodness, these look delicious! I love pecan sandies. I’ll definitely be making these yum. You’re sister is the only person I’ve heard in my 30 years life that doesn’t like pizza. She’s missing out. 😉 that’s crazy. LOL.
