Peppercorn Sirloin Roast Beef

This sirloin roast beef recipe holds a special place in my heart.

It was the first family dinner I prepared in our new home.

We’ve been in our new house for nearly a month, but we’re completely settled and it has felt like home since Day 1. And nothing says “home” like a roast beef dinner, my favorite comfort meal!

Although I normally throw roasts into the slow cooker, I recently got a new internal probe thermometer, so I’ve been experimenting with cooking roasts in the oven. This peppercorn sirloin roast baked up perfectly. It has a simple 3 ingredient rub on top made of Dijon mustard, garlic and crushed peppercorns. I had a peppercorn crusted sirloin roast beef at a restaurant nearly 8 years ago. That savory peppercorn flavor hit the spot that night and I finally (took me long enough, right?) made my own version at home.

Beef is often the centerpiece for holiday dinners. A roast can make a beautiful presentation! Giving an exact time for cooking this sirloin roast is a little tricky since every roast is a different size. I like to bake sirloin roasts slowly in the oven at 325 degrees. By inserting an internal probe thermometer into the center of the roast, you can bake the beef to the exact temperature and doneness that your family prefers: Rare (125 degrees), Medium Rare (135 degrees), Medium (145 degrees), Medium Well (150 degrees) and Well Done (160 degrees).

Peppercorn Sirloin Roast Beef

Ingredients
 

  • 2 tablespoons black peppercorns crushed
  • 1/4 cup Dijon mustard
  • 1 teaspoon minced garlic
  • 3 1/2 pounds top sirloin roast

Instructions
 

  • Preheat the oven to 325 degrees.
  • In a small bowl, mix together the crushed peppercorns, mustard and garlic.
  • Spoon the mustard mixture over the top and sides of the roast.
  • Insert an internal probe thermometer deep into the center of the roast.
  • Place roast on a roasting pan and bake for about 60-70 minutes, until the internal temperature of the roast reaches the desired doneness. Rare (125 degrees), Medium Rare (135 degrees), Medium (145 degrees), Medium Well (150 degrees) and Well Done (160 degrees)
  • Remove the roast from the oven and cover with aluminum foil. Allow the roast to rest for 10 minutes before carving.

btw i so CANNOT WAIT to try this roast recipe!!

i’m having a difficult time finding easy ways to cook veggies that are not just plain green beans or broccoli. You have such yummy sounding corn and cheesy potatoes (can you say ‘to die for’?) But in our house we are trying to eliminate both potatoes and grains… other ideas? I do not like to cook so don’t want to spend a lot of time/effort….
