This healthy soup recipe is full of potatoes, beans, carrots, onion and ground chicken. Serve this mild flavored Chicken Sweet Potato Soup alongside a salad for a comforting healthy dinner.

I’ve been living on soup this winter. The weather has just recently turned bitterly cold, so staying warm from the inside out is high priority. Whether it is beefy soup, rice soup or potato soup, we’re 100% on board with soup for dinner!

This soup has a broth base instead of a tomato base, but it is mild-flavored and great for serving as people may be recovering from winter colds.

Is ground chicken healthy?

I don’t use ground chicken often. Chicken is often thought of as a “healthy” meat. But with ground chicken, you need to watch the fat content. Be sure to grab a package of ground chicken that is lean (90% or higher) or is white meat only if you are concerned about fat content.

Ground chicken is a great change from red meat!

How do you make sweet potato soup?

This sweet potato soup is easy to make on the stovetop.

  • In a large pot over medium high heat, warm oil. Add in onion and cook 2-3 minutes, until they are softened.
  • Next add in garlic, ground chicken and spices.
  • Stir occasionally until chicken is no longer pink (about 6 minutes).
  • Next, add in remaining ingredients. Raise heat to high, mix everything together. Once water comes to a boil, place lid and lower to medium low.
  • Cook for 20-30 minutes, stirring occasionally. Once sweet potatoes are tender, taste for salt and add more if desired.

Can I make this soup in the instant pot?

We’ve made this soup in the Instant Pot when we’ve been short on time. It tastes delicious, but it’s hard to get the carrots cooked fully and not have the sweet potatoes totally fall apart. For that reason, this recipe works best on the stove top.

Can I make this soup in the slow cooker?

Yes! If you make the soup through step 3, then add everything to the slow cooker. Cook on low for 7-8 hours or on high for 4-5 hours.

What to serve with soup?

This soup has veggies, potatoes and protein, so really it is an all-in-one meal. We do love soup served with a side salad (or this broccoli slaw) and some homemade bread.

Ingredients
 

  • 1 tablespoon olive oil
  • ½ medium onion (chopped)
  • 2 cloves garlic
  • 1 pound ground chicken
  • 2 teaspoons oregano (dried)
  • 2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup garbanzo beans (rinsed and drained)
  • 1 carrot (chopped into 1 inch chunks)
  • 1 sweet potato (peeled and diced into 1 inch chunks)
  • 1 bay leaf
  • 6 cups chicken broth

Instructions
