Simply seasoned, easy oven roasted potatoes make the ideal side dish for a meat and potatoes dinner. A high baking temperature makes the potatoes sizzle and brown nicely.

What’s your meal planning strategy? In the 17 years I’ve been married, I’ve tried probably 17 different ways of being on top of the never-ending meal planning issue.

I generally keep the freezer stocked with meats that I can defrost easily depending on how much time I have for the day. And I have easy side dishes such as these easy oven roasted potatoes that I can whip up for a delicious dinner the family will love.

About these Easy Oven Roasted Potatoes:

  • Flavor: This potato recipe is loaded with flavor. It calls for spices that many have stocked in their pantry. They are perfectly seasoned and will match many different main dish recipes.
  • Texture: We bake the potatoes at a high heat so that the exterior is crispy and the interior is soft.
  • Method: Oven roasted potatoes are baked…well…in the oven! You can make these in the air fryer as well and we’ll give the instructions on that below.

Which potatoes are best for oven roasting?

It’s important to know what kind of potato to use for roasting. We prefer to use a good all-purpose potato for roasting such as red-skinned potatoes, Yukon gold or all-purpose round white potatoes. I love red-skinned potatoes because they are waxier and hold their shape well, but Yukon Gold are excellent for roasting.

Russet potatoes are very common and will work, but they may fall apart slightly during baking.

How to Season Potatoes

Our recipe calls for garlic powder, onion powder, salt and pepper. I kept the flavor basic so that it could pair with many things.

Feel free to add whatever kind of spices you’d like:

  • Red pepper flakes for a little spice.
  • Basil, oregano, parmesan cheese and parsley for an Italian flare.
  • Rosemary potatoes are always delicious.
  • Use cumin and paprika for a Mexican touch.
  • Parsley and dill.

The best roast potatoes for you will be potatoes that are seasoned to your liking. Change it up every time you make them, but the herbs shown below in the recipe are our favorites.

How do you make crispy oven roasted potatoes?

  • Preheat the oven to 450ºF.
  • Clean and cut the potatoes into 1/2-1 inch cubes. 
  • In a large bowl, toss the potatoes with the oil and spices. 
  • Spray a shallow baking pan, a baking sheet with 1″ sides or cast iron pan with cooking spray or rub lightly with oil. Spread the potatoes in the bottom of the prepared baking pan. Try to have the potatoes in a single layer with space in between for the ultimate crispiness.
  • Bake for 25 minutes, or until potatoes are tender. Stir the potatoes once after about 15 minutes of baking so they brown on all sides. Turn the broiler on low and broil the potatoes for about 5 minutes to brown them even more. This is optional, but it makes the potatoes crispy. Watch the potatoes closely while they are under the broiler so that they don’t burn.

Air fryer instructions

You can make these in the air fryer if you’d like. Prepare them the same way, then set the air fryer to 450ºF or as high as it will go. The potatoes will take about 20-25 minutes to roast, but stir them 2 or 3 times during cooking to promote even browning.

What do I serve with potatoes?

Serve with your choice of meat and a pile of colorful, steamed veggies for a deliciously healthy meal. Here are a few of our favorite meats:

You can also serve these with cube steak parmesan, creamy turmeric soup, or tuscan chicken pasta.

Storage Instructions

If you have leftovers, place them in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or in the air fryer.

  • 6 small red potatoes
  • 1/4 cup olive oil
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder

The exact time of baking depends on how large the potato chunks are. Ours were about 1″ cubes and took 27 minutes.
Want the potatoes even crispier? Try soaking the cut potatoes in ice cold water for at least 30 minutes before cooking. This pulls out some of the excess starch and helps the potatoes to crisp up.
