Why not make your own chicken nuggets? These Homemade Buffalo Chicken Nuggets from PaleoSpirit.com are made with ground chicken and are grain free, gluten free, dairy free and sugar free!
Guess what? I have a secret to share with you. I am not such a picky eater anymore.
Why? Because over the past year I have grown to love a lot of the recipes posted on this blog. Like our Sweet Potato Fries. Mmmmm! They are so good I would seriously fight over them now!! Plus, I am now able to tolerate tomatoes and onions in my soup, and sometimes Pico de Gallo. I actually tried it last week and it didn’t taste so bad.
And, on top of that, my new love is spicy foods. I found myself putting buffalo sauce on my salad with these nuggets. It definitely hit the spot, and I actually accomplished one of my life goals: Liking a food my brother doesn’t like. It’s easier said than done- trust me. He’ll eat anything!
Nevertheless, my brother was chugging down water in during dinner the night we were eating these Homemade Buffalo Chicken Nuggets and I was doing just fine.
Along with these nuggets being a bit spicy, they are also healthy. Really healthy. I love finding new “paleo” style recipes and we found a winner on PaleoSpirit.com with these chicken nuggets. I’m thankful for those bloggers out there who know their stuff when it comes to grain free, dairy free, gluten free, and sugar free. Lea at PaleoSpirit.com is one of them! Now don’t be afraid of healthy foods like this. I know I was for a while because I wasn’t used to using stuff like coconut flour. You should be afraid when you find beets in the refrigerator, though. That’s a little scary when you’ve never seen a beet in your life, let alone in your kitchen! Don’t worry, though. No beets make their way into this recipe.
Now that you know what’s not in these delicious bites, let me tell you what is inside. You’ve got ground chicken, an egg, coconut flour, buffalo sauce, sea salt, onion powder and garlic powder. Simple, right? Have you ever wondered what is inside store-bought nuggets? Yes, they taste good, but it can be a little scary thinking about what is in those things. You don’t have to worry about what is in these. It’s simple, wholesome ingredients.
Here’s one tip about the recipe- If you want an even spicier flavor, then you can easily replace the buffalo sauce with red hot sauce. It also depends on how generous you are with the sauce you pour on top of the nugget. It’s all up to you-I just stick with buffalo sauce, though. I’m not that brave enough for straight red hot sauce yet!
