When I’m looking through recipes and I see the words gluten-free, my first reaction is to bypass it. Gluten-free things just don’t interest me. Well, I should say they didn’t interest me. Now I’ve realized that some gluten-free recipes out there are actually pretty good. I’m not going to even pretend that they’re the same as Amish Buttermilk Biscuits or the famous, fluffy, Buttery Soft Rolls, but when you’re trying to do “grain-free” eating, sometimes you miss having bread with a meal. Plain old veggies and meat can get boring. So today, I get to share with you the healthiest dinner roll yet. These rolls are from Lea on PaleoSpirit.com. I knew as soon as I saw these that I just had to try them!
This recipe calls for tapioca starch, which I had never heard of. You can find this in the health foods section of your store, or by the flour and cornstarch. I’ve whipped up these Paleo Dinner Rolls a few times and one thing that I learned is that coconut flour is a tricky thing. The original recipe calls for 1/4-1/3 cup flour. We usually need to use 1/2 cup coconut flour. Add the coconut flour slowly to see exactly how much you’ll need. The dough will look initially sticky, but seems to stiffen up a bit as you stir. So if you think you need more flour, try forming dough balls with your hands first-you’ll be surprised that the dough is not as sticky as you thought. I don’t really know why it does that, but it’s pretty great-we’ll know we’re not wasting any expensive coconut flour on it, and you won’t end up with dry rolls.
Another thing I’ve learned is that these little guys don’t rise at all in the oven. So you will have to make them the size you’ll want them in the end. Simple, right? I usually get 6 to 8 rolls- but roll the dough balls however big or small you want them.
I love that these rolls are good for you. I don’t feel any guilt eating two or three during a meal. If there’s any left, that is. Initially the kids turned their nose up at them, but now? We all fight for them. The whole family loves them!
