Summer Party Cupcakes with Kiwi Pretzel palm treesPalm Tree Cupcakes

It’s Teddy Graham Week!

Maddie is at camp this week, so I’m taking this week to share with you some of the cute things we created last Saturday, inspired by Teddy Grahams. My kids love these little bears…their favorite is the cinnamon flavor!

Our first creation is Palm Tree Cupcakes.

Aren’t these little bears so cute, sunning themselves under a kiwi palm tree?  I’d love to be sunning myself under a palm tree right now.

These cupcakes would be super cute for a party with a beach theme, or just a fun edible craft for your kids to make.

beach party cupcakes with teddy grahams and palm trees

For this recipe, you’ll need your favorite cake mix made into cupcakes.  Chocolate, yellow, strawberry…whatever flavor you’d like will work!

Then you’ll need some white icing, crushed vanilla wafers, pretzel sticks, kiwi, fruit roll-ups and Teddy Grahams.

First, you’ll ice the cupcakes.  Then you’ll put some of the crushed vanilla wafers on top of the icing to make…you guessed it…sand!

With a pizza cutter, cut a fruit roll-up into a rectangle, just a little larger than the bear, so it looks like about a beach-towel size.  Lay a Teddy Graham on his beach towel. 🙂

For the kiwi palm tree, peel a kiwi and cut it into thick slices.  This part is the trickiest part.  At first, I thought I’d cut my slices of kiwi thin so it would be lighter and not as hard to stay on the pretzel stick.  My reasoning was completely wrong.  Kiwi slices need to be thick so that you can poke the pretzel stick part way through the center of the kiwi slice and not have it go through to the other side.  If the pretzel goes all the way through to the other side of the kiwi, your palm tree leave will not stay at the top of the tree!  So, take your time when you push the little pretzel into the slice of kiwi.

Before you put the trunk on the tree, however, you can cut about 5 slits around your kiwi slice so that it looks like separate palm leaves.  Cut from the edge of the kiwi, just to the center. Don’t cut into the white center of the kiwi!

Put your tree together, stick it into the “sand” and lay your Teddy Graham under the shade of the tree.  He’s set for a fun day at the beach now:)

These made Maddie so happy.  We joke with her that when she was little, she loved to play with snack foods, especially her fruit snacks. I’d buy Finding Nemo shaped fruit snacks and she’d literally sit at the table for an hour pretending with them, swimming the little fish here and there, singing while she played.

I hope your kids enjoy these as much as mine did!

Ingredients

  • 12 cupcakes
  • 3/4 cup frosting
  • 3/4 cup crushed vanilla wafers
  • 12 pretzel sticks
  • 4 kiwi peeled and sliced into thick slices
  • 1 fruit roll-up
  • 12 Teddy Grahams

Instructions

  • Ice the cupcakes. Put some of the crushed vanilla wafers on top of the icing to make sand. An easy way to do this is to put the crushed vanilla wafers in a bowl, turn over the iced cupcake and roll the frosted side in the crumbs, pressing slightly so that they stick.
  • With a pizza cutter, cut a fruit roll-up into a rectangle, just a little larger than the bear, so it looks like about a beach-towel size. Lay a Teddy Graham on his beach towel.
  • Take a thick kiwi slice and cut about 5 slits around your kiwi slice so that it looks like separate palm leaves. Cut from the edge of the kiwi just to the center. Don’t cut into the white center of the kiwi!
  • Poke the pretzel stick part way through the center of the kiwi slice, but not all the way through to the other side. If the pretzel goes all the way through to the other side of the kiwi, your palm tree leave will not stay at the top of the tree!
  • After your tree is put together, stick it into the “sand” and lay your Teddy Graham under the shade of the tree.

Notes

It’s best to put put the tree together right before serving, since that is when the fruit will be freshest. Also, put the Teddy Graham on the fruit roll-up at the last minute, so he doesn’t get soft:)

These are so cute, and will be so easy for my 5 and 6 year olds to do. What did you use to chop up the wafers?
