S’more Cupcakes

S’more cupcakes are loaded with chocolate frosting, graham cracker crumbs, toasted marshmallows and teddy grahams. Fun for a summer party!

About the only time I eat graham crackers is when I have s’mores. I don’t really care for graham crackers that much because they are just not that exciting. But for some reason, when you put them in a cute bear shape, my love for that graham flavor grows and I could definitely eat a whole box of Teddy Grahams in one sitting.

Look at how cute those little bears are in these S’more Cupcakes. They look pretty happy swimming in all that toasted marshmallow, don’t they?  Can’t blame them, really. Especially with the piece of Hershey’s chocolate next to them!

Why you’ll love this recipe:

What you’ll need:

To make these cupcakes, you’ll need some chocolate cupcakes and frosting.  You can use a store bought cake mix, which are always good and so easy, or you can use our go-to chocolate cake recipe and chocolate buttercream that you can read about  in this Reese’s Peanut Butter Cake post.  That chocolate buttercream recipe is to die for.

If you’re really in a pinch, just buy a dozen chocolate frosted cupcakes and jazz them up with these toppings.

You’ll also need:

  • full-size marshmallows
  • Teddy Grahams
  • Hershey’s bars
  • graham cracker crumbs

How to Make S’mores Cupcakes

  • Frost the cupcakes by using a knife and spreading a thick layer of frosting on. Or you can use a frosting bag and a large tip (such as Wilton 1M or 2D) to make a pretty swirl on top.
  • Immediately after frosting the cupcakes, sprinkle graham cracker crumbs on top. This makes them look just a little extra pretty.
  • Place the marshmallows on a parchment paper lined baking sheet.
  • Put the baking sheet on the top rack. Set the broiler to high and for about 1 minute on the first side. You’re going for a very light toasted color to help seal in the sticky. Then turn them over and move the pan to a lower rack. Keep the oven door cracked open and broil for about 3-4 minutes. Watch them closely and take them out when they just start to show color. Watch them closely!! These will burn very quickly.
  • Allow the marshmallows to cool for a minute or two, then move each marshmallow to the top of a cupcake.
  • Put a Teddy Graham and a rectangle of Hershey bar on each marshmallow.

Watch the smile on the little bear’s face as he sits in the gooey marshmallow, and then see the smiles on your children’s faces when you serve these!

Store the cupcakes at room temperature in an airtight container. The teddy graham will soften slightly as they sit, so I recommend serving them the day you make them.

Ingredients
 

  • 12 chocolate cupcakes (already baked)
  • 2 cups chocolate buttercream (your favorite kind)
  • 1/2 cup crushed graham cracker crumbs
  • 12 Kraft Jet Puffed marshmallows
  • 12 Honey Maid Teddy Grahams (honey flavored)
  • 1 Hershey bar (broken into 12 pieces)

Instructions

Does this cake recipe and your carrot cake recipe, which I plan on making into cupcakes, freeze well so I can make ahead a few batches?

Hi! How did you get the roasted marshmallows off the pan? I put them in the oven for 5 minutes but they stick to the pan and I can’t get them off without it being a mess.

My 3 year old daughter, Charlie, helped me make the S’more Cupcake as a home coming gift for her big sister… They turned out perfect! We added a little crushed graham cracker, coated with butter, to the bottom of the liner before adding the cupcake batter. Thanks for the recipe! Yummy & super cute!

I love the toasted marshmallow on top! Most s’more cupcakes use an alternative, like marshmallow fluff, but there is nothing like the taste of a toasted marshmallow! YUM!
