I couldn’t help but share this delicious walnut bread recipe with you today! It’s so easy to make and the prep takes less than 10 minutes. Isn’t that great?

Imagine early morning. A few slices of this cottage cheese walnut bread topped with butter and your favorite jam are waiting for you on the table. Plus a cup of hot tea or coffee! Doesn’t it sound like perfection? It does to me!

Now to be able to enjoy this walnut cottage cheese bread all you have to do is make sure you have all the ingredients. Yes! Just so you know it’s not that there is a ton of ingredients in this recipe. On the contrary, it calls for 6 basic ingredients. But I couldn’t tell you, even if I wanted how many times I came back home from shop missing a key item. Simply because I had no shopping list with me! Guys, it’s annoying. Especially, when you are looking forward to baking something delicious! Something like this walnut quick bread.

Walnut Cottage Cheese Bread

The preparation is pretty straightforward. All you need here is one bowl and a mixer. A hand mixer is perfect as there is not much mixing going on. You could actually make it without the mixer as well. You are going to combine sugar, eggs and cottage cheese together. Then simply add walnuts, flour and baking powder. Stir them in until well combined. And…this is about it. Pour this mixture in a 2 pound loaf tin and bake.

There is no need to be “supervising” this cottage cheese bread so just set an alarm for 1 hour and off you go – spend time with your kids, prepare some dinner or read a book! 60 minutes later you’ll be rewarded for your “hard work” with a loaf of this deliciousness!

  • In a bowl mix cottage cheese, sugar and eggs together, using an electric mixer.
  • Stir in finely chopped walnuts, sifted flour and baking powder.
  • Pour the mixture into a 2lb(1kg) loaf tin lined with baking parchment paper and bake in a preheated oven at 350F/180C for 1 hour or until and inserted skewer comes out clean.
  • Let it cool down before serving. Serve sliced with jam, butter or anything you like!

I really enjoyed this recipe. I have to bake gluten-free for my family, so I used King Arthur’s Measure for Measure flour and it came out great. I also am trying to reduce the amount of sugar I use and found that 2 TB, along with a pinch of nutmeg, was plenty in this recipe.
