In a small bowl, mix together sweet paprika, dried oregano, garlic powder, cumin, ground cilantro, chili powder, salt and pepper. This will be your blackening spice mix.
Pat the chicken dry using a paper towel. Once dry, brush each side of the chicken breasts with olive oil to ensure the blackening spice mix adheres properly. Coat the chicken breasts evenly on both sides with the blackening spice mixture.
Preheat the grill to medium-high heat. Once the grill is at the desired temperature, place the chicken breasts on the grill, and cook for approximately 6 minutes on each side, or until the internal temperature reaches 165°F.
Remove the chicken from the grill and let it rest for a few minutes before serving. This will ensure all the flavors and juices are retained within the chicken.
