Crusted  Chicken Romano

In a baking dish or pan, whisk together the buttermilk, vinegar and garlic. Add the chicken and turn to coat, then marinate in the refrigerator for 2 hours

Next, create a dredging station. Combine flour and garlic powder in a shallow bowl. In a second bowl, whisk the eggs and 2 tablespoons of buttermilk from marinade. In a third bowl, add the grated Romano, salt, and pepper.

Remove chicken from marinade and allow excess to drip off. Dredge the chicken in the flour, thoroughly coating. Then, dip the chicken in the eggs. Next, coat the chicken in Romano cheese. Press cheese into the chicken to adhere.

Heat a large skillet with olive oil over medium high heat. Work in batches to fry the chicken until golden brown, about 2 minutes per side. The timing will depend on the chicken thickness. The internal temperature should be 165ºF.
