butter
Melt the butter, then add in the flour to create a roux. Cook for 2-3 minutes over low heat.
Add in the milk in small amounts, whisking between each addition. Cook until it starts to thicken.
Remove from the heat and add in freshly shredded sharp cheddar cheese in small increments until fully melted.
Season to taste with salt & pepper, garlic, mustard, Worcestershire sauce....anything you'd like!
It's delicious served over vegetables, potatoes or as a dipping sauce for bread & tortillas.
