Wash the green beans, then snip off the ends and cut into 1" pieces.
Wash and dry the mason jars, then simmer the rings and lids in water for 10 minutes to heat.
Pack the clean jars with green beans, then add canning salt. 1 teaspoon for quarts and 1/2 teaspoon for pints.
Using a funnel, pour boiling water over the green beans to fill the jars, leaving 1" headspace at the top of the jar.
Wipe the rims of the jars dry, then tighten the lids and rings on the jars.
Process the jars in a pressure canner at 10 pounds of pressure. 25 minutes for quart jars and 20 minutes for pint jars.
