Butternut squash is a delicious and nutritious fall and winter vegetable that is versatile and easy to cook. Here’s our step-by-step guide on how to cook butternut squash in the oven.

First, cut the top and bottom off the squash.
Then cut the squash in half.
Scoop out the seeds and pulp and set them aside for another use or discard.
Using a Y-shaped peeler, peel the butternut squash, getting off all the skin and white flesh.
Cut the butternut squash in 1" pieces.
Toss the squash in olive oil, salt and pepper, then roast at 450ºF for 15 minutes. Turn the squash, then roast for another 10. minutes or until soft.
Or, to roast whole squash, simply cut in half, scoop out the seeds, then place face down on parchment paper. Bake at 400ºF for 45-50 mins.
Scoop out with a spoon. It's perfect for mashed squash, soups and casseroles.
