Ingredients
1 1/2cupswhole wheat white flour
1/2tablespoonbaking powder
3/4teaspoonsalt
1teaspoonbaking soda
2largeeggsbeaten
1 1/2cupsbuttermilk
3tablespoonsmelted coconut oil
3tablespoonshoney
Honey Butter Syrup:
1/2cupbuttermelted
1/4cuphoney
1tablespoonhalf and half
1/4teaspooncinnamon
Instructions
In a large bowl, combine the flour, baking powder, salt and baking soda. Set aside.
In a small bowl, combine the eggs, buttermilk, coconut oil and honey. Add this mixture to the dry ingredients and mix it until it is smooth. Fry the pancakes on a hot, lightly greased skillet, baking each side for 2-3 minutes, or until the pancake is cooked through.
For the syrup, combine the melted butter, honey, half and half and cinnamon in a small bowl. Mix well right before serving on top of the pancakes.
Notes
The coconut oil might harden a bit once added to the mixture. That is OK. Just mix as well as possible.
