Fried Green Tomato Salad

  • 8 thick slices of bacon

Fried Green Tomatoes

  • 1 large green tomato
  • 1/2 cup crushed pork rinds
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • salt and pepper (to taste)

Per Salad

  • 8 cups romaine lettuce
  • 12 cherry tomatoes
  • 1 cucumber
  • 1/4 cup diced onion
  • 1/4 cup carrots


  • Cook bacon on stove top until crispy. Drain bacon and save bacon fat.
  • Crush pork rinds into a fine powder.
  • Add parmesan cheese, salt and pepper to pork rinds.
  • Slice a tomato into 4 large slices.
  • Crack the egg into bowl and whisk with a fork.
  • Dip the tomato slices into the egg mixture and then into the pork rind mixture.
  • Heat the bacon fat in the skillet over medium low heat.
  • Add coated tomatoes to the cast iron skillet with bacon fat.
  • Cook over medium heat for about 2.5 minutes on each side depending on the thickness of each slice, until golden brown.
  • Place the tomato on a paper-towel lined plate to drain.
  • Prepare the salad by placing the lettuce, cherry tomatoes, cucumbers, onion and carrots in 4 bowls or plates.
  • Top each plate with 2 slices of bacon and 1 fried green tomato.
  • Serve immediately.
