In a small bowl, mix together the crushed peppercorns, mustard and garlic.
Spoon the mustard mixture over the top and sides of the roast.
Insert an internal probe thermometer deep into the center of the roast.
Place roast on a roasting pan and bake for about 60-70 minutes, until the internal temperature of the roast reaches the desired doneness. Rare (125 degrees), Medium Rare (135 degrees), Medium (145 degrees), Medium Well (150 degrees) and Well Done (160 degrees)
Remove the roast from the oven and cover with aluminum foil. Allow the roast to rest for 10 minutes before carving.
