Ingredients

  • 4 large eggs beaten
  • 3-1/2 cups skim milk
  • 1/2 cup canola oil
  • 1/2 cup unsweetened applesauce
  • 2 teaspoons vanilla
  • 2 cups whole wheat flour
  • 1 cup milled flax seed
  • 1/2 cup wheat germ
  • 1/2 cup flour
  • 2 tablespoons and 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt

Instructions

  • In a large bowl, mix together the eggs, milk, oil, applesauce, and vanilla. Beat in the flours, flax seed, wheat germ, baking powder, sugar, and salt. Mix just until the batter is smooth.
  • Preheat a waffle iron and spray it with cooking spray. Pour the appropriate amount of batter into waffle iron and cook until crisp and golden brown, according to waffle iron directions.
  • Serve with fresh fruit, or your favorite maple syrup.

Notes

This recipe made 20 4-inch square waffles.
