BBQ Chicken Soup

  • 3 Chicken Breasts (about 1 pound)
  • 1 cup BBQ sauce
  • 16 ounces Chicken Broth
  • 1 can Black Beans, rinsed (15 ounces)
  • 1 cup frozen corn
  • Sour Cream
  • Cheddar Cheese


  • Spray the crock pot sides with cooking spray and place three chicken breasts in the bottom
  • Cover the chicken breasts with 1 cup of your favorite bbq sauce
  • Pour chicken broth and black beans into the crock pot
  • Cover and cook on Low for 8 hours or High for 4 hours
  • Shred the chicken using two forks and then pour in the cup of corn, mix together
  • Cook for an additional 30 minutes on high
  • Serve with sour cream and cheddar cheese on top, if desired
