Hi Everyone! I’m Emily from Love, Pasta and a Tool Belt and I’m so excited to share with you my recipe for Crock Pot BBQ Chicken Soup! My Simple Crock Pot BBQ Sandwiches are a staple in our house, and only recently I’ve started doing bbq chicken in the crock pot. It’s easy and delicious, so a win-win, especially since having our first baby. Every time I would make the bbq chicken in the crock pot I would start wondering how it would be to make it as a stew. The flavor was excellent and I thought I’d love to mix it up a bit and so was born this Crock Pot BBQ Chicken Soup.
We thrive off of easy recipes in our house, and the crock pot has become my best friend. I’ve started planning probably 2-3 meals a week using my crock pot and I’m always trying to come up with new recipes that I can just throw in the crock pot and forget about until dinner time. This Crock Pot BBQ Chicken Soup was perfect for that very thing.
I started out by spraying my crock pot with some cooking spray. I’ve found that the bbq sauce can stick to the crock pot sometimes so I wanted to avoid that in my soup. I also love to use the crock pot liners, but I kid you not, the last five times I’ve gone to buy them my grocery has been out of them. I think I need to ask a manager to restock them. My husband really appreciates when I use the crock pot liners since he does the dishes and it makes it so much easier.
For this recipe, I decided to use 3 chicken breasts. I’m only cooking for two of us and this made enough to feed four. If you have a big enough crock pot you can always double that (and everything else) and have enough to feed a bigger family.
I added in one cup of bbq sauce. I did a Sweet Brown Sugar BBQ sauce but I think it would be delicious with any flavor, it really just depends on your tastes. One thing I love about this recipe, is that you can adjust it to your tastes.
We’re not big on beans in our family so I only did one can of black beans, rinsed. If you love the beans then by all means, add more!
Next, you add in about 16 oz. of chicken broth. Adding in this amount with the three chicken breasts gave my stew a nice thickness, if you’re looking for more of a soupy consistency then you could add more chicken broth. I just made sure that the chicken was completely submerged in the broth.
Cook the stew on low for 8 hours or on high for 4 hours. Once it’s done then you’ll shred the chicken and add in a cup of frozen corn and cook for another 30 minutes on high.
I topped mine with sour cream and cheese because in my opinion, everything is better with sour cream!
