Chocolate Chip Oatmeal Bars

  • 1 cup butter softened
  • 1 pound brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups quick cooking oats
  • 12 ounces mini chocolate chips


  • In a large bowl, cream the butter and sugar together. Add in the eggs and vanilla. Mix well.
  • Next, add in the dry ingredients and mix until everything is combined. Fold in the chocolate chips.
  • Spread the batter in a greased 9x13 pan and bake the brownies at 350 degrees for 25 minutes.
  • Best served warm with ice cream!


We like ours brownies to be just a bit underbaked. 25 minutes is perfect for us. If you'd like your brownies a little more done, add another 5 minutes.
