Chicken Sweet Potato Soup

Ingredients

olive oil

medium
onion
(chopped)

garlic

pound
ground chicken

teaspoons
oregano
(dried)

teaspoons
chili powder

black pepper

cup
garbanzo beans
(rinsed and drained)
1
carrot
(chopped into 1 inch chunks)
1
sweet potato
(peeled and diced into 1 inch chunks)

bay leaf

chicken broth
Instructions
In a large pot over medium high heat, warm oil. Add in onion and cook 2-3 minutes, until they are softened.
Next add in garlic, chicken, and spices.
Stir occasionally until chicken is no longer pink (about 6 minutes).
Next, add in remaining ingredients. Raise heat to high, mix everything together. Once water comes to a boil, place lid and lower to medium low.
Cook for 20-30 minutes, stirring occasionally. Once sweet potatoes are tender, taste for salt and add more if desired.
Serve warm.
