Preheat the oven to 325ºF. Spray an 8 ½ x 4 ½” loaf pan with nonstick cooking spray and line with parchment paper if desired.
In a large bowl, mix together the oil, sugar, egg, vanilla and mashed bananas in a bowl. 1/3 cup vegetable oil, 1 cup granulated sugar, 1 large egg, 1 teaspoon vanilla extract, 1 cup mashed bananas
Add the flour, salt, baking soda, baking powder, and cinnamon. Use a rubber spatula to gently stir the ingredients together just until combined. Then fold in the blueberries. Do not over mix. 1 1/2 cups all-purpose flour, 1/2 teaspoon salt, 1/2 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon cinnamon, 1 1/2 cups fresh blueberries
Pour batter into the prepared loaf pan. Sprinkle the top of the batter with coarse sugar.
Bake for 60 minutes or until a toothpick inserted in the center of the loaf comes out clean. Allow the bread to cool for 10 minutes, then remove to a wire rack to cool completely.
