This easy Rotisserie Chicken Noodle Soup is ready in 30 minutes! Made with a store-bought rotisserie chicken, vegetables, egg noodles and chicken broth, it's a simple homemade-style soup perfect for a quick family dinner.
Heat the olive oil in a large Dutch oven or soup pot over medium heat. Add the onion, carrots and celery and cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.

Stir in the garlic paste, salt, black pepper, thyme and oregano. Pour in the chicken broth and add the bay leaf. Bring the soup to a boil, then reduce the heat to a simmer.
Add the dry egg noodles and cook until tender, about 10 minutes. Stir every few minutes so the noodles don't clump together or stick to the bottom of the pot.

While the soup simmers, remove the meat from the rotisserie chicken and shred it into bite-sized pieces.
