Instructions

Add the sliced onions and cook for 12–15 minutes, stirring occasionally, until they become deeply golden and soft. The onions should look jammy and caramelized. 2 large yellow onions

Push the onions to the sides of the skillet. Season the chicken with salt and pepper and place it in the center of the pan. Cook the chicken for 3–4 minutes per side to lightly brown it. 4 boneless skinless chicken breasts OR 6 boneless chicken thighs, 1 teaspoon salt, ½ teaspoon black pepper

Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken reaches 165°F internally.
