Instructions
Brown beef and onions in a Dutch oven (or large skillet with cover) over medium-high heat. Drain off any fat. 1 pound lean ground beef, 1 cup yellow onions
Add in the garlic, tomato paste, Italian seasoning, paprika, salt and pepper until combined. Cook and stir for a minute or two. 3 cloves garlic, 2 tablespoons tomato paste, 1 teaspoon Italian seasoning, 1 teaspoon paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper
Pour in the beef broth and tomato sauce and stir to combine. Add the uncooked pasta and bring to a simmer. Cover with a lid and reduce heat to low. Cook for 12-14 minutes, stirring every few minutes until the pasta is al dente and the sauce has thickened. Remove from heat. 3 cups beef broth, 1 can tomato sauce, 8 ounces uncooked cavatappi pasta
While the beef and pasta are cooking, place the ricotta cheese, Parmesan, dried basil and a sprinkle of salt and pepper into a mixing bowl. Mix until combined. When the pasta is cooked, dollop in the cheese mixture and swirl, so there are pockets of ricotta throughout. 1 cup ricotta cheese, 1/2 cup grated Parmesan cheese, 1 teaspoon dried basil, Salt and pepper
Sprinkle the mozzarella cheese over the top of the dish and place the lid back on. Allow the cheese to melt, about 2-3 minutes. Serve with a sprinkle of chopped fresh parsley. 1 cup shredded mozzarella, Chopped fresh parsley
Notes
Feel free to add some veggies, like spinach, squash, peppers or mushrooms into this dish to make it more nutrient dense.
Storage Instructions: Place leftovers into an airtight container and refrigerate for up to 5 days. Reheat in the microwave or stovetop until heated through. If the pasta seems dry the next day, add more pasta sauce or marinara sauce.
This tastes great the next day and is easy to reheat for lunch. You can even make a double portion as meal prep or lunch.
