Preheat the oven to 400º Fahrenheit. Place paper liners in two muffin tins (a total of 24 muffins).
In a large mixing bowl, whisk together the sourdough, oil, eggs, milk, vanilla and sugar. Mix well. 1 cup Amish Friendship Bread Starter, 2/3 cup vegetable oil, 3 large eggs, ½ cup 2% milk, ½ teaspoon vanilla extract, 1 cup granulated sugar

Scoop the batter evenly into each paper liner, filling the muffin cups about 3/4 full. Bake at 400º Fahrenheit for 5 minutes, then without opening the oven, reduce the temperature to 325º and bake for an additional 10-12 minutes, or until the muffins test done. A toothpick inserted in the center should come out mostly clean or with a few moist crumbs.
