Pour the egg mixture into the dry ingredients and mix until smooth. Add the chopped apples and melted butter. 1 3/4 cups finely chopped green apples, 6 tablespoons salted butter
Using a mixer, beat the egg whites until they are fluffy and stiff. Fold the egg whites into the batter. Spoon the batter into a hot waffle maker and cook until golden brown. Makes 8 waffles, 4" square.

Add the paste to the apples and cook until slightly thickened, stirring constantly. This should take about 3-4 minutes. Remove from the heat and serve over waffles.
