Skip the box mix! This homemade vanilla pudding comes together in one saucepan in about 20 minutes using pantry staples you already have. It's thick, creamy, and lightly sweetened. It's a true old fashioned vanilla pudding made from scratch.
In a small bowl, mix together the cornstarch, flour, sugar and salt. 2 tablespoons cornstarch, 1/4 cup all-purpose flour, ⅓ cup granulated sugar, 1/4 teaspoon salt
Heat 2 ½ cups of the milk in a saucepan on the stovetop over low heat. The milk should be at about 200ºF. 3 cups whole milk
While the milk is heating, whisk together the remaining ½ cup milk and eggs in a bowl. Sift the flour mixture over the milk & eggs and whisk quickly until smooth. 2 large eggs
Once the milk is hot, add this egg/milk mixture into the hot milk. Whisk well. Add the butter and vanilla. Cook and stir for 1 minute or until thickened. It will get to about 165ºF. 2 tablespoons salted butter, 1 tablespoon vanilla extract
Allow to cool slightly, then serve as desired.
Notes
This is not a super sweet vanilla pudding but is the perfect base for fruit and whipped cream. Increase sugar to ½ cup if you’d like the base pudding sweeter.
A piece of plastic wrap pressed directly onto the surface of the pudding will prevent a skin from forming.
