Preheat the oven to 325ºF. Grease and flour two 8 1/2 x 4 1/2" loaf pans. Or line the pan with parchment paper so you can easily remove the loaf.
Mix together the peanut butter, oil, sugar, eggs, vanilla and zucchini in a large bowl. Set aside. 3/4 cup creamy peanut butter, 1/4 cup vegetable oil, 2 cups granulated sugar, 2 teaspoons vanilla extract, 3 large eggs, 2 cups grated zucchini
In a separate bowl, whisk together the flour, salt, baking soda, and baking powder. Add the wet ingredients to the dry ingredients and mix just until combined. Fold in the peanut butter baking chips. 3 cups all-purpose flour, 1 teaspoon salt, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 1/2 cups peanut butter baking chips
In a small bowl, combine the brown sugar, flour and softened butter. Mix until the streusel is crumbly. 1/2 cup brown sugar, 1/2 cup all-purpose flour, 3 tablespoons salted butter
Pour the batter evenly between the two pans. Divide the streusel topping between the two loaf pans, sprinkling the streusel on top. Bake for 65 minutes or until the bread tests done. A toothpick inserted into the center of the bread may have a few moist crumbs, but no wet batter.
