I’ll admit it.
We’re not the most “cultured” family. Â We like simple things…comfortable clothes, a home-cooked meal of comfort foods, and we are happy liking these simple things. Â We’ll take a home-cooked meal over a fancy restaurant any day.
Sometimes, though, it is nice to go out, and one of our favorite places to eat is Olive Garden. Â Anyone else have a hard time pronouncing some of the food items on their menu? Â I’m hoping it is not just us.
This pasta e fagioli soup is something we often order at Olive Garden. I’m pretty sure we say the name of this soup differently every time we order it. Â I try so hard to listen to the waitress as she patiently repeats the soup name said the right way, and I still can’t remember it.

Let’s just say that I’m glad I’m sharing this recipe with you by writing and not by speaking. Â That way those of you who know your Italian food won’t laugh at my lack of sophistication.
Regardless of the correct pronunciation, this Slow Cooker Pasta e Fagioli needs to be on your dinner menu this winter. Â It’s chock-full of beans, tomatoes, veggies, pasta and beef.
This is going to take minimal prep in the morning. Â Brown the ground beef, drain the fat, then add the beef and the rest of the ingredients to the crock pot. Â Leave it to simmer all day long in the slow cooker and end up with a hearty soup for your family dinner!
Here’s a serving hint…
Matt and I try to limit the amount of carbs we have. Â So when a soup calls for rice or noodles, we cook them separately. Â That way, the kids can still enjoy the little bit of pasta in the soup, but we can have it without!

Slow Cooker Pasta e Fagioli

Total Time 5 hours 20 minutes
Ingredients
- 2 lbs ground beef
- 1 medium onion chopped
- 3 carrots chopped
- 4 stalks of celery chopped
- 2 cans petite diced tomatoes (14.5 ounces each) undrained
- 1 can red kidney beans drained and rinsed (15.5 ounces)
- 1 can great northern beans drained and rinsed (15.5 ounces)
- 32 ounces beef stock
- 3 teaspoons oregano
- 2 teaspoons pepper
- 3 teaspoons parsley
- 1 teaspoon Tabasco sauce optional
- 1 jar spaghetti sauce (24 ounces)
- 2 cups uncooked small shell pasta
Instructions
- In a large skillet, brown the ground beef. Drain off the fat and put it in a slow cooker.
- Add all of the ingredients except for the pasta.
- Cook the soup on low for 7-8 hours, or on high for 4-5 hours.
- With one hour left, add in the uncooked pasta. Cover again and cook until pasta is tender.
- You can also cook the pasta separately and add it to the soup after cooking.
- Serve!

You can use black beans in place of the kidney beans if you'd like.

Very Good indeed! Although I had used the only can of beans I had available at the time ( which were kidney beans & navy beans) it still came out pretty decent! Loved it! Very hearty for the men in your life! It’s a definite win- win… I’ll be cooking this again! Haha 😂

Delicious! I have also made this with ground turkey and chicken broth (veg stock can be used too. I tried that when I was out of chicken broth) and left out the tobacco for the turkey version. Made it for a card and supper night and everyone at the table gave it high praise. All took home the recipe!
