Candy Cane Sugar Cookie Truffles

Christmas is just a few days away! Are you ready? I did a lot of online shopping this year, although sometimes that is just as challenging because there are so many choices. I may have gotten carried away procrastinating, since the stores did promise that gifts would arrive by Christmas. Sometimes that literally means just in time, like the day before, so there is going to be some last minute wrapping happening here. Fortunately my big kids are happy to jump in and help!

If you still need an easy dessert for the big day, I have just the thing! These sugar cookie truffles are so fast to make using ingredients you probably have in the pantry. And they are perfect for kids to help, from crushing the candy canes to rolling the balls.

This would also be a fun treat to make with the kids for vacation week, especially to use up the leftover candy canes!

Sugar Cookie Truffles

Everyone loves chocolate chip cookie dough truffles, but sometimes I like to make a sugar cookie version. The sugar cookie dough is so great for flavoring different ways, and what better than peppermint and candy canes for this time of year. The candy canes give a little bit of texture in the smooth truffle dough. Plus, the bright red color and contrast with the chocolate coating is stunning.

Another great thing about these sugar cookie truffles is the size. Just one or two bites, they are just right for nibbling. Since they are rather rich, that is a good thing.

How to Make Chocolate Candy Coating

Chocolate chips melted with a little bit of shortening makes an easy “candy” coating, but you can definitely use store bought candy melts. I melt them in my glass measuring cup, because it is easier to dip the truffles if the chocolate is in a deep container. I used to have some plastic candy dipping tools, but it really is just as simple to dip with a fork or spoon. The top of the truffles will be sprinkled with more candy canes hiding any imperfections. Plus homemade isn’t supposed to be perfect 😉 Either way these will taste amazing.

Candy Cane Sugar Cookie Truffles

Candy cane sugar cookie dough truffles. A fun dessert for all ages.

Ingredients
 

  • 1 cup Butter Softened
  • 1 Cup Sugar
  • 1/2 Teaspoon Peppermint Extract
  • 2 Cups all-purpose flour 11.25 ounces
  • 1/2 Cup Crushed Candy Canes + More for Topping
  • 1-3 Tablespoons Milk
  • 2 Cups Chocolate Chips
  • 2 Tablespoons Shortening

Instructions
 

  • Cream together the butter and sugar using a hand mixer or a stand mixer with the paddle attachment. Beat in the peppermint extract. Add in the flour and ½ cup candy canes, then beat until the flour is mostly absorbed. Add in the milk, 1 tablespoon at a time, mixing until the dough can hold together. (Check by picking up a little bit of dough and forming a ball, it shouldn't crumble.)
  • Form dough into balls, approximately 1 and ½ to 2 tablespoons of dough each. Cover and chill the balls until very cold, at least two hours in the refrigerator.
  • Melt the chocolate chips and shortening together in the microwave or in a double boiler. Cook on short 30 second intervals, stirring in between, just until the chips are melted, being careful not to let them burn. Let cool for 5 minutes.
  • Dip the truffle balls into the chocolate, and allow the excess chocolate to drip off. I use a fork to dip them. Place the truffles onto a wax paper lined cookie sheet, I use a sharp knife to slide the truffle off the fork onto the cookie sheet. Sprinkle each one with crushed candy canes right after it is dipped, the chocolate will start to harden quickly.
  • Refrigerate the truffles until ready to serve.
  • Recipe makes 28-32 truffles, depending on the size you make them.

Notes

To crush the candy canes: place them in a baggie and hit with a spoon or rolling pin.Store bought candy melts can be used in place of the chocolate chips and shortening.
