Sugar Crunch Chocolate Chip Cake is a soft, sour cream–rich chocolate chip cake with a glossy, crackly sugar crust on top. No coarse sugar, no fussy frosting, no fruit to wait on for the season. One bowl, mini chips in every bite, and that signature sugar crunch that made this whole cake family go viral.
This is the fruit-free version of the sugar crunch cakes so many of you asked me to make year-round, and it might be my favorite one yet. Soft, buttery crumb. Mini chocolate chips in every forkful. And that shattery “sugar crunch” top that crackles when you cut into it.

What Makes the Sugar Top Actually Crackle?
A little hot water. That’s the trick, and it’s the difference between between this cake and our other sugar crunch cakes.
Here’s why: this batter is lower in liquid than our other fruit cakes, so if you sprinkle dry granulated sugar on top, it could just sit there. By drizzling a couple of tablespoons of hot water over that sugar right before baking, the sugar dissolves just enough to go glossy on the surface. Then, in the heat of the oven, it sets back up into a thin, crackly, candy-like crust instead of grainy specks.
You can do this with our other sugar crunch cakes, too! And I also use the hot water trick on my blueberry cobbler, apple cobbler and peach cobbler.
What You’ll Need and Why Each One Matters
Nothing hard to find here, but a couple of these do real work in the sugar crunch chocolate chip cake:
- Salted butter, room temperature: room temperature means it dents easily when you press it but still holds its shape. Cold butter won’t cream; melty butter makes a greasy crumb.
- Granulated sugar, divided: Most creams into the batter and a little gets held back for that crackly top.
- Eggs + vanilla: structure and warmth, to help it taste like a chocolate chip cookie
- All-purpose flour, baking powder, salt: Measure the flour by spooning and leveling so the crumb stays tender.
- Full-fat sour cream: the secret to a soft, moist, close crumb that stays good for days. Don’t swap to low-fat here. You’ll notice the difference.
- Mini chocolate chips: minis distribute so you get chocolate in every bite, and they don’t sink like full-size chips.
- Hot water: the crunch-maker. Don’t skip it!

How to Make Sugar Crunch Chocolate Chip Cake

- Cream the butter and sugar. Beat softened butter with the batter portion of the sugar until pale and fluffy, a few minutes. This is where the tender crumb starts, so don’t rush it.
- Add eggs and vanilla. Beat until smooth.
- Add the dry ingredients with the sour cream. Whisk flour, baking powder, and salt together, then mix in with the sour cream just until combined.

- Fold in the mini chips. By hand, so you don’t beat them to bits.
- Spread and top. Smooth the batter into your prepared pan. Sprinkle the reserved granulated sugar evenly over the top, then drizzle the hot water over the sugar. (This is the crunch step.)

- Bake the sugar crunch chocolate chip cake about 35 minutes at 350°F, until the top is glossy and set, the edges are golden, and a toothpick in the center comes out with a few moist crumbs.

Can I Make It Ahead? How Do I Store It?
Yes, sugar crunch chocolate chip cake is a great made ahead but it will loose some of its crackly top as it sits.
- Room temperature: cover and keep 2–3 days.
- Freezing: freeze cut squares or triangles, well wrapped, up to 2 months. The sugar top softens on thawing but still tastes wonderful.

Easy Ways to Change It Up
- Dark or semi-sweet: swap the minis for chopped dark chocolate if you want deeper flavor and pools of melted chocolate in the sugar crunch chocolate chip cake.
- A little crunch in the crumb: a handful of toffee bits or chopped pecans folded in with the chips.
- Add fruit: once you’ve got the base down, this is the same method behind all our fruit versions: berry cake, cherry cake, peach blueberry cake, lemon raspberry cake.

Ingredients
- ½ cup salted butter room temperature
- 1 cup granulated sugar divided ~¾ cup for the batter, ~¼ cup reserved for the top
- 2 large eggs
- 2 teaspoons vanilla extract
- 1⅓ cups all-purpose flour
- 1¼ teaspoons baking powder
- ¼ teaspoon salt
- ¾ cup full-fat sour cream
- 1 cup mini chocolate chips
- 2 tablespoons hot water
Instructions
- Preheat oven to 350°F and grease a 9" round cake pan.
- Cream the softened butter with ¾ cup of the sugar until light and fluffy, about 2-3 minutes. ½ cup salted butter, 1 cup granulated sugar
- Beat in the eggs and vanilla until smooth. 2 large eggs, 2 teaspoons vanilla extract
- Whisk the flour, baking powder, and salt together; mix into the butter mixture alternately with the sour cream, just until combined. 1⅓ cups all-purpose flour, 1¼ teaspoons baking powder, ¼ teaspoon salt, ¾ cup full-fat sour cream
- Gently fold in the mini chocolate chips. 1 cup mini chocolate chips
- Spread the batter into the pan. Sprinkle the reserved granulated sugar evenly over the top. Drizzle the hot water over the granulated sugar. This melts the sugar into a glossy top so it bakes into a sugar crunch. 2 tablespoons hot water
- Bake 35 minutes, until the top is glossy and set, edges golden, and the center tests with a few moist crumbs.
- Cool before slicing so the sugar top crackles.
