If you’re looking for a quick cookie recipe that will bring smiles to everyone’s faces, you’ll love our yellow cake mix cookies! With just three main ingredientsโ€”cake mix, oil, and eggsโ€”and about 20 minutes, you’ll have a batch of warm, delicious cookies that taste just like birthday cake.

Loaded with chocolate chips and colorful mini M&Ms, these cookies made with yellow cake mix will bring kids of all ages together in the kitchen. They’re even easier than our easy chocolate chip cookies!

Ingredients Needed

There are 3 main ingredients in this easy cake mix cookie recipe:

  • Yellow cake mix. What brand of cake mix should you use? This works with any traditional cake mix. For this recipe, I used a yellow cake mix from Aldi, but Duncan Hines and Betty Crocker are two great options, too.
  • Vegetable oil. Vegetable oil, canola oil or even melted coconut oil work well.
  • Large eggs. Use two eggs preferably at room temperature.
  • Mix ins: semi-sweet chocolate chips and mini M&Ms are my favorite, but add whatever you’d like!

How to Make Yellow Cake Mix Cookies in 4 Steps

  • In a medium bowl, use a hand mixer to mix together the cake mix, eggs and oil. Scrape the bowl as needed and mix until well combined.ย 
  • Fold in the chocolate chips and mini M&Ms.ย 
  • Use a cookie scoop to scoop the cookie dough onto a parchment lined baking sheet. Leave 2โ€ between each cookie. Press in any scraggly edges to the cookie dough, and top the cookie dough balls with a few extra chocolate chips & M&Ms. This will make them look so pretty!
  • Bake for 8-10 minutes or until the cookies are set. Let the cookies rest for 5 minutes before moving to a cooling rack.

Recipe Variations

When you use a cake mix to make cookies, the possibilities and flavors of cake mix are endless! Here are a few ideas:

  • Use white cake mix and sprinkles for a vanilla cake batter cookie.
  • A chocolate cake mix with white chocolate chips would give a pretty contrast. Or peanut butter chips for a chocolate peanut butter flavor.
  • Lemon cake mix with or strawberry cake mix with a simple powdered sugar glaze make a fruity spring cookie.
  • Add chopped nuts such as almonds, pecans or walnuts into any flavor cookie.

Ingredients
 

  • 1 box yellow cake mix 15.25 oz box
  • 2 large eggs room temperature
  • 1/2 cup vegetable oil 4 ounces
  • 3/4 cup chocolate chips
  • 3/4 cup mini M&Ms

Instructions
 

  • Preheat the oven to 350ยบF. Line a cookie sheet with parchment paper.
  • In a medium bowl, use an electric mixer to mix together the cake mix, eggs and oil. Scrape the bowl as needed and mix until well combined. 1 box yellow cake mix, 2 large eggs, ½ cup vegetable oil
  • Fold in the chocolate chips and mini M&Ms. ¾ cup chocolate chips , ¾ cup mini M&Ms
  • Use a cookie scoop to scoop the cookie dough onto a parchment lined baking sheet. Leave 2โ€ between each cookie. Press in any scraggly edges to the cookie dough, and top the cookie dough balls with a few extra chocolate chips & M&Ms. This will make them look so pretty!
  • Bake for 8-10 minutes or until the cookie is set.
  • Allow the cookies to cool for 5 minutes on the pan, then move to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature. These cookies also freeze well. Wrap twice in a freezer bag and store in the freezer for up to 6 weeks. Thaw at room temperature.
