The recipe makes two strombolis and is perfectly portable for sharing. And if you’re from the Midwest, you know nothing pairs better with this than classic ranch dressing.

About this Breakfast Stromboli Recipe:

  • Flavor: Choose a turkey sausage you like because that sausage will have a predominant flavor in this stromboli. The eggs and cheese temper that spicy sausage.
  • Texture: Add cream cheese to the scrambled eggs to make them soft and creamy. The bread bakes up soft and fluffy, and the outside is almost like a pretzel texture. Chewy and delicious!
  • Method: Plan time for the bread dough to thaw and rise. The great thing is you can do this overnight in the fridge. After the bread dough is risen, you’ll need about 20 minutes prep time and 25-30 minutes bake time.

  • Frozen Bread Dough: The secret to a hassle-free base. Make your own bread dough if you’d like (I recommend our Italian bread recipe.), but frozen bread dough bakes up perfectly and you’ll still end up with that home-baked flavor.
  • Eggs. One large egg contains 6 grams of high-quality protein for only 70 calories, plus they provide essential vitamins and minerals. That means one serving of this stromboli is a strong start to the protein you need for the day.
  • Turkey Sausage: Turkey is naturally low in fat and contains lean protein. It also provides immune-boosting nutrients like iron, zinc and potassium.
  • Cheddar Cheese: The cheese melts on the bottom and top of the filling, helping hold each slice together.
  • Cream Cheese: This is our secret ingredient that adds flavor and creaminess to the scrambled eggs.

How to Make Breakfast Stromboli

Check the instructions on the bread dough packaging that you buy, but in general, you’ll need 5-7 hours at room temperature or 12-14 hours in the fridge overnight.

Timing: I put the bread dough in the fridge in the early evening, then pull it out as soon as I get up in the morning. It helps the rise of the dough to be at room temperature for an hour or two before rolling.

Scramble the eggs.

  • In a glass bowl, whisk the eggs well. Heat the butter in a skillet over medium heat. Add the eggs. 
  • Use a spatula to move the egg mixture around as it cooks. Continue to do this until the eggs are almost all set.
  • Add in the cream cheese. Continue to move the eggs around to mix in the cream cheese, until it is mixed in and the eggs are fully cooked, then remove the eggs from the heat.

Brown the turkey sausage.

While the eggs are cooking, brown the turkey sausage in a skillet over medium heat until it is no longer pink. Drain off any fat.

Assemble the stromboli.

  • Roll one loaf of bread dough out on a lightly floured surface to a 10×14” rectangle.
  • Sprinkle with ½ cup shredded cheddar cheese down the center lengthwise.  Spoon half of the scrambled eggs over the cheese.
  • Top with half of the turkey sausage. Sprinkle an additional ½ cup cheddar cheese on top.
  • Then repeat with the second loaf of bread dough.
  • With kitchen scissors or a pizza cutter, make cuts down the long sides of the dough (both sides) about 1 ½” thick and about 3 inches long.
  • Starting at one end, fold one piece of dough across the filing, then fold the first piece of dough on the other side over.
  • Continue in this manner, criss-crossing from one side to the other, until the entire stromboli is covered. Tuck in the ends slightly to seal.
  • In a small bowl, whisk together the egg and water. Brush the top of the dough lightly with the egg wash.

Bake the stromboli.

Bake at 400ºF for 25-30 minutes. If the stromboli is getting too browned on top, cover loosely with foil.

Ingredients
 

  • 2 pounds frozen bread dough
  • 10 large eggs
  • 1 tablespoon salted butter
  • 2 ounces cream cheese
  • 1 pound turkey sausage
  • 2 cups sharp cheddar cheese

Egg wash:

  • 1 large egg
  • 1 tablespoon water

Instructions
 

  • Plan ahead to prepare the dough. Set out the frozen bread dough to rise according to the package instructions. (Set at room temperature in a loaf pan. Then cover with plastic wrap. Allow it to thaw and rise for 5-6 hours.)
