Cucumber Tomato Salad Recipe

There is nothing prettier than fresh summer produce, am I right? Tomatoes are beautiful on their own but when you grow heirloom tomatoes it takes “pretty” to a whole new level. Dark greens and purples, textured fruit of different shapes and sizes, these garden veggies can make a beautiful presentation!

Easy Vegetable Salad

This vegetable salad with tomatoes, onion and cucumber is really easy. Slice up your veggies. We like to make our cucumbers and onions a little thinner than we slice the tomatoes.

If you use cherry tomatoes, we cut them in half so they are easier to eat.

Balsamic Dressing

To keep this salad low carb and sugar free, we made a simple balsamic vinegar dressing.  You can use a different flavor vinegar if you’d like. We’ve used red wine vinegar in the past and loved it.

What is the ratio of olive oil to balsamic vinegar?

When you mix up the balsamic dressing for a salad, use two parts olive oil to one part vinegar. If you were making a marinade you could use equal amounts of olive oil and vinegar.

Chilled Vegetable Salad

Be sure to plan enough time to allow the salad to marinate in the refrigerator for about 30 minutes. This will allow the flavors to blend and make your veggies have a cool crunch.

Ingredients
 

  • 2 to 3 pounds tomatoes (I used heirloom tomatoes)
  • ½ medium red onion (sliced)
  • ½ cucumber (sliced)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Dressing:

  • cup balsamic vinegar
  • ¼ cup olive oil
  • ¼ teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Wash and pat dry tomatoes.
  • Cut tomatoes in large slices.
  • Arrange all the vegetables in a bowl or on a platter.
  • Sprinkle the tops with salt and pepper.
  • In a small bowl, whisk together the ingredients for the dressing.
  • Pour dressing over salad and chill for 30 minutes.
  • Serve cold.
