Buffalo Chicken Pinwheels

Use refrigerated pizza crust to make these buffalo chicken pinwheels loaded with chicken, cheese and buffalo sauce. An easy family dinner idea!

If there’s one kind of food Matt loves, it’s buffalo chicken. And if there’s one thing I like to do, it’s make Matt’s favorite foods and watch his smile when he digs in.  

I’m always trying to find new buffalo chicken recipes for him.  I’ve done buffalo chicken mac ‘n cheese, smashed potatoes and nuggets, but one of our favorites is buffalo chicken dip.

The main reason we love this recipe is that it is QUICK. We’ll share variations below, but here’s our two shortcuts. It uses:

  • refrigerated Pillsbury classic pizza crust
  • canned chicken

How to Make Buffalo Chicken Pinwheels

  • Preheat the oven to 350 degrees Fahrenheit.
  • Unroll the pizza crust dough and spread it out on a lightly floured counter. Press the edges to make it all evenly flat.
  • In a small bowl, mix the drained chicken, cream cheese, ranch dressing, buffalo sauce and ¾ cup cheddar cheese until well combined.

  • Spread this mixture on the rolled out pizza dough.

  • Roll up the dough jelly roll style.

  • Slice the roll into 9 pieces. Place cut side up in an 8×8 pan that has been sprayed with cooking spray.
  • Sprinkle the remaining cheddar cheese on the top.
  • Bake at 350 degrees Fahrenheit for 25-30 minutes, or until the dough is lightly browned and cooked all the way through.

**Pro Tip: Pull up on the edge of the center roll to make sure it is baked through. It shouldn’t look doughy at all.**

Variations to This Recipe:

  • If you like things really spicy, use the original Frank’s red hot sauce.
  • Try different refrigerated doughs.  You could try crescent rolls or biscuits…just watch the baking time because each one will bake differently.
  • Add blue cheese dressing instead of ranch if you prefer. Or just sprinkle blue cheese crumbles on top.
  • Roll and cut the pinwheels into smaller sizes so you get more “bite size” rolls which is great for potlucks. When we do this it bakes in a 9×13 pan and makes a delicious game day appetizer.

We find that this recipe is best served right after making them. If you have leftovers, be sure to refrigerate them in an airtight container. You can reheat them in the microwave if you desire.

Ingredients
 

  • 1 tube Pillsbury classic pizza crust (13.8 ounces)
  • 10 ounces chunk chicken, drained (1 can)
  • 8 ounces cream cheese (softened)
  • 1/2 cup ranch dressing
  • 1/3 cup buffalo sauce
  • 1 cup shredded cheddar cheese (divided)

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • Unroll the pizza crust dough and spread it out on a lightly floured counter. Press the edges to make it all evenly flat.
  • In a small bowl, mix the drained chicken, cream cheese, ranch dressing, buffalo sauce and ¾ cup cheddar cheese until well combined.
