Personally speaking, I am a very bad fruit eater. Our refrigerator is usually stocked with seasonal fruits but even then I do not even make an attempt to snack on them. Which is why, I go the roundabout way of eating fruits by making some interesting recipes using them. For example, watermelon feta salad, mango lassi, peach lemonade, strawberry detox water etc., etc., to name a few. These are my favorite ways to enjoy fresh fruits.
And, recently I added this mango creamy summer fruit salad into the list. What I love about this salad is its mango flavored creamy base. It really brings a new level of deliciousness into the fruits which I otherwise find boring to eat.
This salad recipe is actually inspired from a fruit custard side dish. I had this dish last month when we went to a 2 day Sahaja Yoga meditation seminar. The mango custard salad was served as a side during one of the lunches. I loved it so much that I tried it at home by remembering its flavors.
Creamy Mangy Fruit Salad!
For this salad recipe, you will need very few ingredients. I used fresh strawberries, grapes, apple, and peaches to make the mixed fruit salad. For the creamy base, mix mango pulp with some fresh cream and condensed milk. You can use your choice of favorite fruits.
This salad is very easy to prepare and perfect for hot summer days. Serve it as a snack or dessert or as a side. You can even take it to your neighborhood summer barbecue parties or potluck to please the crowd.
