The Cream Cheese Layer: Why It’s the Secret to Everything

Most baked spaghetti recipes skip this step but it makes the baked spaghetti taste so much better.

As the casserole bakes, that cream cheese mixture slowly melts down into the pasta. It creates a layer of creamy richness between the noodles and the mozzarella on top.

Tips for getting the layer right:

  • Soften the cream cheese all the way. Cold cream cheese will not spread smoothly and will bake up in chunks.
  • Don’t mix it into the pasta. Spread it on top as a distinct layer.
  • If you’re a cottage cheese person, it can be swapped for the sour cream. It adds a slightly lighter, tangier note but still works beautifully. Ricotta works the same way.

The Recipe That Gets Me Compliments I Didn’t Earn

I have a very specific category of recipes in my back pocket. They’re ones that make people think I worked much harder than I did. Peppermint bark and baked oatmeal are on that list. But million dollar spaghetti is at the top.

The “million dollar” label comes from that creamy center layer with amazing flavor. It sounds a little unusual if you haven’t had it before, but trust me. This is the kind of dinner that gets passed around at potlucks and requested at family gatherings and even served at Christmas. It’s also the kind of dinner you can put together the night before and bake when you need it, which makes it one of my favorite weeknight solutions.

What You’ll Need

Good news: most of this is pantry and refrigerator staples.

  • The pasta: Standard spaghetti, 12 ounces. No need to splurge here!
  • The meat: I use lean ground beef, at least 90% lean. If you use an 80/20, drain some of the fat before adding onion. Italian sausage is great in million dollar spaghetti, too!   • The cream cheese layer: You need the cream cheese to be genuinely softened to room temperature, not cold from the fridge. If you skip this step, you’ll end up with lumpy white chunks instead of a smooth, spreadable layer. Pull it out 30–45 minutes before you start cooking. Cottage cheese or ricotta can substitute for the sour cream if that’s what you have.

How to Cook Spaghetti for a Casserole

Cook the spaghetti slightly under al dente, intentionally. Pull it from the water when it still has a little resistance and feels slightly firm in the center. It will finish cooking in the oven while it soaks up the meat sauce, and if it’s already perfectly cooked when it goes in, it will come out mushy.

How to Make Million Dollar Spaghetti

Step 1: Make the meat sauce. Brown the ground beef, breaking it into small crumbles as it cooks. Add the diced onion and let it cook about 4–5 minutes. Stir in the minced garlic and cook one more minute until fragrant. Pour in both jars of spaghetti sauce, stir to combine, and simmer for 4–5 minutes.

Step 2: Add the pasta. Add the drained, undercooked spaghetti directly into the meat sauce and toss gently to coat every strand. Transfer the whole thing to a greased 9×13 baking dish and spread it evenly so there are noodles in every corner.

Step 3: Make the cream cheese layer. In a bowl, use a spatula to break up and soften the cream cheese until it’s smooth. Add the sour cream, Italian seasoning, Parmesan, garlic powder, salt, and pepper and stir until it’s fully combined. Spread this mixture evenly over the top of the spaghetti.

Step 4: Top and bake. Scatter the shredded mozzarella evenly over the cream cheese layer. Cover the dish tightly with aluminum foil and bake at 375°F for 20 minutes. Remove the foil and continue baking for 10–15 more minutes until the cheese is melted and golden brown.

Step 5: Rest before serving. Let the million dollar spaghetti sit for 10 minutes before cutting. This lets the layers firm up so you get clean slices instead of everything sliding apart on the serving spoon.

Can You Make Million Dollar Spaghetti Ahead of Time?

Yes, and this is one of the best reasons I make million dollar spaghetti for dinner.

Assemble the casserole completely (pasta and sauce in dish, cream cheese layer spread on top, mozzarella and parsley added), then cover tightly with foil and refrigerate for up to 24 hours. When you’re ready to bake, pull it from the fridge while you preheat the oven and add 10–15 minutes to the covered bake time since you’re starting from cold.

Salad: A crisp classic Caesar salad or a simple Italian chopped salad cuts through the richness nicely.

Ingredients
 

  • 12 ounces spaghetti
  • 1 pound ground beef 90% lean
  • 1 1/2 cups diced yellow onion
  • 3 cloves garlic minced
  • 48 ounces spaghetti sauce 2 24-ounce jars
  • 4 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1 tablespoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Cook the spaghetti in a large pot of salted, boiling water. You will want to slightly undercook the pasta, so that it is still a little hard and not quite al dente. It will continue to soften in the casserole. 12 ounces spaghetti
  • While the spaghetti is cooking, begin to make the sauce by browning the beef in a large skillet or Dutch oven over medium heat. Break it up as it cooks into smaller pieces. 1 pound ground beef
  • Add the onion until it softens and then stir in the garlic. Mix in the 2 jars of spaghetti sauce and bring to a low simmer for 4-5 minutes. 1 ½ cups diced yellow onion, 3 cloves garlic, 48 ounces spaghetti sauce
  • Add the cream cheese to a bowl and lightly cream it with a spatula until it breaks up. Add in the sour cream, Italian seasoning, Parmesan cheese, garlic powder, salt and pepper and mix until well combined. 4 ounces cream cheese, ½ cup sour cream, 1 tablespoon Italian seasoning, ½ cup grated Parmesan cheese, 1 teaspoon garlic powder, ½ teaspoon salt, ¼ teaspoon black pepper
  • Set your oven to 375°F and spray a 9×13-inch baking dish with cooking spray. Add the cooked spaghetti into the meat sauce and gently toss to combine.
  • Place the spaghetti and sauce into the baking dish and make sure to evenly distribute the spaghetti throughout the whole baking dish. Spread the cream cheese layer over the top of the spaghetti evenly.
  • Top with the shredded mozzarella cheese. Cover with foil and bake for 20 minutes. Remove the foil and bake for about 10-15 more minutes until the cheese is melted and golden. Top with fresh parsley. 2 cups shredded mozzarella cheese, 2 tablespoons chopped fresh parsley
  • Allow the casserole to set up for about 10 minutes. Cut and serve the spaghetti casserole.
