This easy lasagna soup is ready for your dinner table in under an hour. Keep reading for tips on how to make this on the stovetop, in the Instant Pot and in the slow cooker.

What is lasagna soup?

Lasagna soup is an easy way to enjoy lasagna. It takes all of the lasagna ingredients and puts them in a beef broth tomato soup base. You’ll even top it with a ricotta cheese topping. Don’t skip it. It’s so good!

One fun way to make this soup is to use actual pieces of lasagna noodles broken up. I don’t know about you, but I always end up with just a handful of lasagna noodles left in the box. This is how you can use them!

How to Make Lasagna Soup

  • In a large pot, heat the olive oil over medium heat.
  • Add in the chopped onion and cook for 2-3 minutes until translucent and softened.
  • Add in the garlic and sauté for 1 minute.
  • Add in the ground beef. Cook until the beef is browned and then drain off (and discard) excess fat.

  • Add in the beef stock, diced tomatoes, tomato paste, basil, oregano, Italian seasoning, salt and pepper and stir until combined.

  • Bring to a light boil, reduce heat to medium-low, cover and simmer 20 minutes.
  • While soup is simmering, stir cheese topping ingredients together in a medium bowl.

  • After the soup has simmered for 20 minutes add in the noodles and cook for an additional 8-10 minutes until the noodles are tender.

  • Ladle soup into bowls, top with a spoonful of the cheese mixture and sprinkle with chopped parsley.

Vegetables to Add to Soup

We often load up our soup with veggies….whatever veggies happen to be in the fridge! This not only adds vegetables to our diet, but also helps the soup to serve more.

One of our favorite add ins is zucchini, but you could also add carrot or cauliflower. Add grated kale or potatoes if you’d like!

Can I make lasagna soup in the slow cooker?

Yes! You can easily make this soup in the slow cooker. Here are the steps:

  • Do steps 1-5 of the recipe.
  • Instead of adding ingredients to the stove pot, add them to the slow cooker, along with the beef mixture.
  • Cover and cook on low for about 6 hours.
  • Add the noodles, cover the slow cooker and cook an additional 60 minutes or until the noodles are fully cooked.

Can I make lasagna soup in the Instant Pot?

Yes! You can make this soup in the Instant Pot. Here are the steps:

  • Do steps 1-5 of the recipe, cooking the onion and browning the beef on in the IP on Saute mode. Drain off any fat.
  • Add the remaining ingredients (including the noodles) to the pot with the beef mixture.
  • Cover, set to seal and set for 4 minutes on high pressure.
  • Allow the pot to naturally release for 10 minutes.
  • Do a quick release after that time to release any extra pressure.
  • Serve!

What to Serve with Lasagna Soup

This soup is loaded with veggies, noodles and beef, so it can almost be a complete meal! Here are a few favorite sides:

Can you freeze lasagna soup?

Yes! This soup makes a great freezer meal. Prepare the soup up through step 5, then store it in a zippered bag or other storage container for up to 3 months in the freezer.

When you are ready to make the soup, defrost it completely, then pick up with step 6, allowing the soup to simmer and adding the noodles.

Ingredients
 

  • 1 tablespoon olive oil
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 pound lean ground beef
  • 4 cups beef broth
  • 28 ounces diced tomatoes (with juice)
  • 6 ounces tomato paste
  • 1 teaspoon ground oregano
  • 2 teaspoons italian seasoning

  • 2 ½ cups uncooked rotini pasta

Cheese Topping:

  • ½ cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup ricotta cheese
  • fresh parsley (chopped for garnish)
