Deliciously flavored slow cooker pork loin with homemade gravy. This comfort dinner is served with mashed potatoes and a side of veggies.

Over the years, I’ve gotten into the habit of buying meat when it is on sale. I love a good deal and I can’t help it! Now that the kids are older and gone often, I’ve found that I’m not using up the meat as quickly.

I spent a few weeks pulling out meat from the freezer to use up and came across a pork loin. This slow cooker pork loin with gravy was an easy dinner to whip up for Sunday when everyone was home. It’s such a comforting meal!

Is pork loin a good cut of meat?

Pork loin is a good cut of meat if you are looking for an economical cut of meat that serves a lot of people. It’s not as tender as a pork tenderloin, but it still has a mild flavor and is delicious with gravy.

Can I use pork roast instead? Yes. Pork roast will work well for this recipe too. You may need to cook it slightly longer to be fork tender.

How to Make Slow Cooker Pork Loin

  • Cut the pork loin in half, lengthwise. Pat it dry with a paper towel.
  • Mix the flour, mustard powder, ranch dressing and pepper. Coat the pork loins in the flour mixture, all over.
  • Heat the oil in a large 12โ€ skillet and sear the pork loins on all sides.

Do you have to sear pork loin before slow cooking it? Searing meat helps to seal in the seasoned coating and give it a pop of flavor. It takes just a few minutes to do and really develops the flavor, so don’t skip it!

  • Spray the inside of a slow cooker with cooking spray then place the sliced onions on the bottom.
  • Place the pork on top of the onion slices. Add the chicken broth and cook on high for 4 hours (or 6 hours on low).
  • Remove the pork roasts from the slow cooker. Mix the cornstarch with water and add to the gravy in the slow cooker. This will thicken it up. (You can also do this in a saucepan if you’d like.)
  • Put the pork roasts back into the gravy, sprinkle with the chopped parsley and serve over mashed potatoes (or your favorite side).

Homemade Gravy

I like my gravy thicker, is it ok to use more cornstarch? Yes, depending on your slow cooker and how much steam has escaped, it can lead to differing gravy consistencies. If you find yours is too thick add some more broth or water. If not thick enough, then add cornstarch to a little water like earlier and stir into the gravy.

Storage Instructions:

After cooling this will need to be stored in the refrigerator in an airtight container, for 4 days. Reheat as required.
This will freeze well โ€“ store in an airtight freezer safe container for 3 months.

Ingredients
 

  • 5 pounds pork loin roast (boneless)
  • ยฝ cup all-purpose flour
  • 1 teaspoon ground mustard
  • 2 teaspoons ranch dressing dry mix
  • 1 teaspoon black pepper
  • 2 tablespoons canola oil
  • 1 onion sliced
  • 4 cups chicken broth
  • ยฝ cup corn starch
  • ยฝ cup water
  • parsley chopped (optional, garnish)

  • Remove the pork roasts from the slow cooker. Mix the corn starch with water and add to the gravy in the slow cooker. This will thicken it up.
  • Put the pork roasts back into the gravy, sprinkle with the chopped parsley and serve over mashed potatoes (or your favorite side).
