The crockpot does all the work, transforming a simple chuck roast into melt-in-your-mouth beef with a tangy, buttery sauce. I love that it takes hardly any prep. Just 10 minutes in the morning and you’ll come home to a warm, hearty dinner. It’s viral for a reason!
Around here, we serve it with mashed potatoes or pile it onto a homemade bun for sandwiches, and it always disappears quickly. Or make it low carb by serving with mashed cauliflower or cauliflower rice.

It is only 6 ingredients: roast, beef stock, ranch dressing mix, onion soup packet (or au jus gravy mix), butter and peperoncini peppers.
What cut of beef is best for Mississippi Pot Roast? A boneless chuck eye roast (or just chuck roast) is perfect for pot roast. It is a marbled cut which makes the roast tender, juicy and perfectly shreddable once you’ve slow cooked it.
Another option is bottom round roast (rump roast) or eye of the round roast. These cuts of meat are a little leaner, but because you are adding in butter to cook with the beef, you won’t sacrifice the flavor.

Ingredients
- 3.5 pounds chuck eye roast (trimmed)
- 1 tablespoon vegetable oil
- 1 cup beef stock
- 1.25 ounces onion soup mix or au jus packet
- 1 ounce ranch dressing mix
- 1/4 cup salted butter (cubed)
- 8 peperoncini peppers
Instructions
- Heat the oil in a large skillet over medium heat. Season the roast lightly with salt and pepper. Sear the chuck eye roast on both sides to brown. Remove the roast and place it in a slow cooker. 3.5 pounds chuck eye roast, 1 tablespoon vegetable oil
- Pour 1 cup of beef broth on top, then sprinkle the onion soup mix and ranch dressing packet over the roast.1 cup beef stock, 1.25 ounces onion soup mix, 1 ounce ranch dressing mix
- Add the cubed butter on top of the roast. Place the peperoncini around the roast. ¼ cup salted butter, 8 peperoncini peppers
- Cover and cook on low for 8-9 hours or on high for about 6-7 hours.
- Shred with a fork and serve over mashed potatoes or egg noodles. Add salt and pepper to taste.
Notes
- Thicken the juices with a cornstarch slurry to make a simple gravy.
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop in a skillet.

How to Make Slow Cooker Mississippi Pot Roast: Step by Step
Sear the roast. Is this necessary? Yes! Although it may seem unnecessary, this step seals in the flavor of that beef and enhances the flavor. Just do it.
Add ingredients to the slow cooker. Add 1 cup of beef broth, onion soup mix and ranch seasoning over the roast. Then add the cubed butter (this may seem strange but it is what makes the beef melt in your mouth) and peperoncini.
Cook all day in the crock pot. If you slow cook a roast all day, it helps get it fork tender. Plan for at least 8 hours on low. If you choose to cook on high, allow for at least 6-7 hours. If you use a different cut of meat it may take longer to become fork tender.
