This summer has been the summer of a tangy coleslaw. I’ve always loved a creamy coleslaw or pineapple coleslaw. But lately, I like a simple cabbage slaw without mayo. A crisp and tangy apple cider vinaigrette to give recipes a pop of fresh and bright flavor.

I took the slaw that I use on our firecracker nachos and paired it with a homemade chipotle honey mustard sauce on these chicken wraps.

A lightly fried chicken tender pairs perfectly with the bright flavored slaw and warm chipotle sauce. But you can use grilled chicken, rotisserie chicken or shredded chicken for a lighter option if you prefer.

Chicken Wraps with Slaw and Chipotle Honey Mustard

Ingredients
 

For the Vinegar Slaw:

  • 1 1/2 cups shredded red cabbage
  • 1 1/2 cups shredded green cabbage
  • 1/4 cup thinly sliced red onion
  • 1/3 cup thin sliced cucumber
  • 1/4 cup shredded carrots
  • 1/3 cup apple cider vinegar
  • 1 1/2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Chipotle Honey Mustard Sauce:

  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 3 tablespoons dijon mustard
  • 1 tablespoon adobo sauce from a can of chipotle peppers
  • 1/2 teaspoon whole mustard seed

Instructions
 

  • Make our fried chicken tenders, or buy frozen chicken tenders and air fry them. You can also use leftover grilled chicken or rotisserie chicken. 8 cooked chicken tenders
  • Make the slaw by adding all of the ingredients in a bowl and mixing. Stir several times after making the slaw to ensure the vinegar dressing evenly coats the cabbage slaw. 1 ½ cups shredded red cabbage, 1 ½ cups shredded green cabbage, ¼ cup thinly sliced red onion, ⅓ cup thin sliced cucumber, ¼ cup shredded carrots, ⅓ cup apple cider vinegar, 1 ½ tablespoons granulated sugar, ½ teaspoon salt, ¼ teaspoon black pepper
  • In a small bowl, whisk together the ingredients for the chipotle honey mustard. ¼ cup mayonnaise, 2 tablespoons honey, 3 tablespoons dijon mustard, 1 tablespoon adobo sauce, ½ teaspoon whole mustard seed
  • Lay out one tortilla. Place some of the slaw on top of the tortilla. (If you're not serving right away, dab the slaw on a paper towel slightly so it doesn't make the wrap soggy.) Drizzle a little sauce over the slaw. 4 flour tortilla wraps
  • Place two chicken fingers on top of the slaw, then top with a little more sauce.
  • Roll the wrap like a burrito and serve.

Chicken Wrap Variations

The best thing about chicken wraps is that you can completely make them your own based on the ingredients you have. Here are a few ideas:

  • The wrap. Use whole wheat tortillas, a large leaf of romaine lettuce for a lettuce wrap, spinach tortillas or low carb tortillas.
  • The chicken. I used chicken tenders, but grill chicken breasts to make a grilled chicken wraps. Air fry frozen chicken strips make a great crispy chicken wrap.
  • The dressing. Try the honey mustard dressing, but if you love ranch, try ranch dressing as a creamy dressing. It would be great with this soft tortilla wrap.
  • Add cheese. Monterey jack, cheddar cheese, or even swiss would pair well with this wrap.
  • More fresh veggies. Try corn, thin sliced tomatoes, avocado, or arugula for added texture.
