When you’re trying to eat healthy, high protein meals, side dishes can seem hard. Baked Potatoes. Grilled veggies. Steamed veggies. Salad. Although they taste delicious, they can get a little old when eaten day after day.

An even bigger problem comes in when we have to take a side dish to a picnic or potluck. I think every picnic I went to last summer, I took along a veggie tray. Again…boring. Yes, I could have taken one of our yummy pasta salads or macaroni salads, but I like to bring something that those that are gluten free can eat.

This low carb Paleo Broccoli Slaw was the answer! And now I make it regularly.

About this Paleo Broccoli Slaw Recipe

Traditional broccoli slaw salad is made with 2 ingredients I needed to switch up for this sugar free, gluten free version: Ramen noodles and sugar. I was fairly certain I could just leave the sugar out. But the ramen noodles? I needed to figure out how to replicate that flavor and the crunch.

I simply looked at the seasonings that are in Ramen noodle seasoning packets, spent some time adding and subtracting spices until I got a flavor that I liked. And for the crunch? I added sliced almonds.

It’s such a simple broccoli salad that you can have on the table in 10 minutes. It’s dairy-free and gluten free.

How to Make Paleo Broccoli Slaw

  • Place the broccoli coleslaw in a large bowl. Add the onions and mix. Set aside.
  • In a small bowl or shaker cup, combine the olive oil, vinegar and spices. Stir or shake well.
  • Pour the dressing over the colelsaw and stir to coat.
  • Just before serving, mix in the sliced almonds.

Recipe Variations

  • Instead of almonds, use sunflower seeds or cashews.
  • Add chilled rotisserie chicken for a complete meal. It would make a great lunch.
  • Love red onions? Use those instead of the sweet onions.
  • Add dried fruit. Dried cranberries or raisins give a slightly sweet flavor.

Storage Instructions

This salad is best eaten the same day you make it. Store any leftovers in the fridge for up to 3 days. It will soften slightly as it sits.

This is a lovely recipe when you want the no mayo option of slaw. I used it with cut cabbage and shredded carrots rather than broccoli slaw — and it was delicious.

This sounds so good and I want to make it for a bbq, but I bought toasted sliced almonds instead of just sliced almonds. Do you think they would work?

I just started looking for Paleo recipes. I would need the halve the vinegar. Otherwise, it was a nice combination of spices.
