Turkey Lettuce Wraps are paleo, gluten-free, sugar-free and grain-free. It is a great way to use up leftover turkey, but is also completely versatile for whatever leftovers you have in your fridge.
January is the month where many people start to think about healthier eating.  Although we changed quite a bit about the way we eat last summer, we got a bit off track with the Christmas goodies and busy schedules of December.  We’re not a big “resolution” family.  Any day of the year can be a fresh start. But it is nice to have a concentration on healthier foods after a very sweet Christmas!
This is Turkey Lettuce Wraps is one of our favorite lunches. Â Don’t you just love how colorful healthy eating can be?
Here’s what’s in this lovely wrap:
Turkey
Bacon
(We love Hormel Natural Choice Bacon)
Avocado
Pico de Gallo (Fresh Salsa)
And you’re going to wrap that all in a huge lettuce leaf.
 Although we like to eat it as it is, there are so many things you can change or add to make this just the way you like it.  Change up the meat if you’d like. Use deli turkey or ham.  Add your favorite kind of cheese.  Put a touch of mayo or mustard on top. Or add hot sauce like Matt does.  Don’t have fresh salsa?  Use tomato and onion slices.
You can fold the turkey lettuce wraps like a taco, or you can roll it up.
You could even chop everything up and eat it as a salad!
It’s a great lunch, and you’ll love having some of our Sweet Potato Fries right alongside.

Ingredients
- 1/2 cup shredded turkey
- 2 slices cooked bacon
- 1/4 cup fresh salsa
- 1/4 cup chopped avocado
- 1 large Romaine lettuce leaf
Instructions
- Layer the turkey, bacon, salsa and avocado on a lettuce leaf. To eat, fold the lettuce leaf in half like a taco or roll it up like a wrap.
- Add any other ingredients that you'd like: cheese, mayonnaise, mustard, ham, etc.
