Chicken cordon blue is one of those dishes that I never really made at home. I’d often have it in restaurants and my favorite deli in Florida had a chicken cordon bleu sandwich that was irresistible.
At home, I’d stick with chicken cordon blue casserole or make this crockpot chicken cordon bleu because it’s so easy!

I used gluten free cream of chicken soup and gluten free stuffing mix so the whole family could enjoy this recipe.
Chicken breasts are a great option as a lean meat. Chicken thighs always cook up tender in the slow cooker, too.

Slow Cooker Chicken Cordon Bleu

Ingredients
- 4 boneless skinless chicken breasts 2 pounds
- 4 slices ham
- 4 slices swiss cheese
- 1 can cream of chicken soup 10.5 ounces
- ¼ cup whole milk
- 1 tablespoon dijon mustard
- 2 tablespoons parmesan cheese
- dash nutmeg
- 1 box dry chicken stuffing mix 6 ounces
Instructions
- Spray a slow cooker liner with cooking spray. Place the 4 chicken breasts in the bottom.
- Place a slice of ham on the top of each chicken breast, then top with a slice of swiss cheese.
- In a small bowl, whisk together the cream of chicken soup, milk, mustard, parmesan cheese and nutmeg. Pour this over top the chicken.
- Sprinkle the dry stuffing mix over the top. Cover and cook on high for 3-4 hours or on low for 6-7 hours or until the chicken is fork tender. Season with salt and pepper to taste.
- NOTE: If desired, uncover the last 45 minutes of cooking so that the stuffing firms up a little. It won’t be a “crispy” stuffing topping, but can help the texture. This isn’t necessary though and tastes just as good without. OR you can wait and sprinkle the dry stuffing mix on top about 30 minutes before serving.
Notes
Drizzle the top of the stuffing with butter if you prefer, but I find that its not needed and saves a few calories.
Store leftovers in an airtight container in the fridge for up to 3 days.

Do I have to use a stuffing mix?
No! You can use croutons, homemade bread crumbs or honestly? Just leave them off. The slow cooker chicken cordon bleu will be lower in carbs that way.
Can I stuff the chicken breasts instead of just laying the ham and cheese on top?
Yes! This works well especially if the chicken breasts are large. Butterfly the chicken and stuff the ham and cheese inside.
What else can I add for flavor?
Try adding ½ cup diced onions, 1 teaspoon minced garlic, or any other fresh herbs.
