This Blueberry Banana Bread Has the Crunchy Sugar Top Everyone Loves

This bread is based off my grandma’s zucchini bread recipe. It’s tried and true so the texture is perfectly balanced as is the flavor. On this recipe I was able to lower the amount of oil since there was so much fruit. Don’t worry though, it’s still has a tender crumb.

There’s no need to pull out the electric mixer. Mix this by hand so that the banana blueberry bread doesn’t get too tough.

This is perfect for brunch, breakfast, or a simple afternoon treat.

I tested this with fresh berries and recommend them for this recipe. If you only have frozen blueberries, let them fully thaw to room temperature, then let them drain well so that you’re not adding too much moisture to the blueberry banana bread.

The bananas should be very ripe so that the natural sweetness comes through, but they don’t have to be completely brown. In the picture above, these are about perfect. I’d only let them get slightly more brown if necessary!

  • Preheat the oven to 325ºF. Spray an 8 ½ x 4 ½” loaf pan with nonstick cooking spray and line with parchment paper if desired.
  • In a large bowl, mix together the oil, sugar, egg, vanilla and mashed bananas in a bowl. ⅓ cup vegetable oil, 1 cup granulated sugar, 1 large egg, 1 teaspoon vanilla extract, 1 cup mashed bananas
  • Add the flour, salt, baking soda, baking powder, and cinnamon. Use a rubber spatula to gently stir the ingredients together just until combined. Then fold in the blueberries. Do not over mix. 1 ½ cups all-purpose flour, ½ teaspoon salt, ½ teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon cinnamon, 1 ½ cups fresh blueberries
  • Pour batter into the prepared loaf pan. Sprinkle the top of the batter with coarse sugar.
  • Bake for 60 minutes or until a toothpick inserted in the center of the loaf comes out clean. Allow the bread to cool for 10 minutes, then remove to a wire rack to cool completely.

Storage: Store leftovers in an airtight container at room temperature for up to 3 days. Freeze any leftover bread for up to 4 weeks.

How to Make Blueberry Banana Bread: Step by Step

Make the batter. I keep this batter to one mixing bowl for an easy cleanup! Mix together the oil, sugar, egg, vanilla and mashed bananas in a bowl.

Add the flour, salt, baking soda, baking powder, and cinnamon. Use a rubber spatula to gently stir the ingredients together just until combined. Then fold in the blueberries. Do not over mix.

Can I make this blueberry banana bread recipe into muffins?

Yes. Try baking at 375ºF for 18 minutes in a muffin pan.

Will the blueberries sink in the bread?

I did not have this problem at all. The mashed bananas make the batter thick, helping the blueberries to suspend during baking.

Can I use gluten free flour?

Yes. I have the best results with King Arthur all-purpose gluten-free flour.
