I’m a big fan of gourmet popcorn. It’s the type of sweet and salty snack that I just can’t stop eating, ya know? We had too much fun with this Easter Candy Popcorn Mix…a gourmet popcorn perfect for spring. It has a white chocolate coating and is a sweet flavored popcorn recipe you’ll quickly fall in love with.

Whether you are fixing this Easter Bunny snack mix for an Easter egg hunt party or making it to use up leftover Easter candy, there’s one thing I know…your kids will be all in!

What type of popcorn is best for a snack mix?

Use a lightly salted bag of prepared popcorn. If you have a popcorn maker available to you, feel free to pop your own popcorn. You shouldn’t need to make any other changes to the recipe aside from lightly salting your homemade popcorn. If you use butter flavored popcorn, this will have a different flavor. It will be more buttery than sweet.

How to Make Candy Popcorn

You’ll only need about 15 minutes to prepare this popcorn. And it can be made up to 2 days in advance, making it the ideal party recipe.

  • Pour popcorn onto a large parchment lined sheet pan.
  • Sprinkle 1 cup mini marshmallows evenly over top of popcorn.
  • In a small bowl, melt the chocolate chips in the microwave in 20 second intervals. Do this slowly, as white chocolate can burn very quickly! Stir between every interval and lower the time to 10 seconds when it starts to melt.
  • Pour chocolate evenly over popcorn and marshmallows and mix to coat.

  • Melt candy melts in the microwave (also very slowly as you did the white chocolate) and pour over top of the popcorn.

  • Sprinkle on candies and sprinkles while the chocolate is still wet. We used M&Ms and spring colored Sixlets in this gourmet popcorn recipe.
Popcorn and Candy
  • Cool and completely dry before eating, about 20 minutes.

How far in advance can popcorn mix be made?

If you would like to make this ahead of time, make it the day before you need it. This popcorn usually lasts for 2-3 days if kept in an airtight container at room temperature. Because of the chocolate coating, the popcorn tends to soak up moisture more quickly, resulting in less of a crunch.

Ingredients
 

  • 8 cups lightly salted popcorn
  • 1 ½ cups high quality white chocolate (I used Ghirardelli white chocolate chips)
  • 1 ½ cups mini marshmallows divided (set aside ½ cup)
  • ¾ cup Wilton candy melts (light pink)
  • 1 cup chocolate M&M Easter candies
  • sprinkles (optional)

Instructions
 

  • Pour popcorn onto a large parchment lined sheet pan.

What candy goes good with popcorn?

Many types of Easter candy would be good add-ins for this recipe. M&Ms, caramel candies, candy corns, Reese’s pieces, nuts, chopped candy bars and Sixlets.

Can I mix the popcorn and marshmallows together in a mixing bowl instead of on the sheet pan?

Yes, but it may require a larger mixing bowl or to work in batches to ensure that all the popcorn is evenly coated with chocolate. I have found that it’s easier to mix it together evenly when everything is on a sheet pan. It also saves time and extra clean up this way.

What are candy melts?

Wilton sells candy discs in many different colors that melt beautifully. They work well for candy making and drizzling on popcorn and other baked goods. You can find these in the cake or candy making section of any hobby store.
